There may only be one month left of summer, but there’s still plenty of time to enjoy this spicy feta dip. It only needs five ingredients and takes literally two minutes to make! Just pop your ingredients in a food processor and blitz. I flavored this creamy dip with spicy jalapeños, spring onions and parsley, but you can make it your own by using your favorite herbs and spices. It’s a great, easy appetizer to serve at your next summer party — a serious people-pleaser, people!
Ingredients:
Serves 3
— 2 spring onions
— small bunch fresh parsley
— few slices pickled jalapeños
— 1 cup crumbled feta cheese
— 1-2 Tablespoons Greek yogurt
— black pepper
— 2 Tablespoons extra virgin olive oil, to serve (optional)
Instructions:
1. Roughly chop the spring onions and add them to a food processor, along with the parsley and jalapeños. Blitz until chopped to your desired texture.
2. Add the crumbled feta cheese and Greek yogurt, along with a good pinch of black pepper. Pulse again a couple of times until just combined.
3. Serve the spicy feta dip topped with some more chopped jalapeños, fresh parsley and a drizzle of extra virgin olive oil.

I left my dip quite chunky, but if you prefer a smoother dip, just blend a little more. Feel free to adjust the number of jalapeños too, depending on how spicy you like it!

And that’s literally all there is to it. This spicy feta dip really couldn’t be quicker or easier, and I guarantee everyone will love it. I served mine with some sticks of toasted pita bread for dipping, but it would be great with veggie sticks too, or even served as part of a mezze platter.
