Spike Your Sweets: ROOT Beer Float Shooters

If we had to describe our ideal root beer float in two words, they would be: mini and boozy. And these are those floats! Today is National Root Beer Float Day (yes, there is a day for everything), so we’re celebrating with these single-serving floats made with one of our favorite spirits—ROOT from Art in the Age.

Did you know that root beer was originally called “root tea” and was alcoholic? It was during temperance movement that the alcohol was removed and the name was changed to root beer. We applaud Art in the Age for bringing the booze back, and we’ll be celebrating National Root Beer Day with these shooters from now on.

Ingredients:
– vanilla bean ice cream

– ROOT (available to order here)

– root beer

Special equipment:
Mason jar shot glasses (Though any shot glasses will do.)

Instructions:
1. Using a melon baller or tablespoon, put one scoop of vanilla ice cream in each shot glass.

2. Add 1 tablespoon of ROOT to each shot glass.

3. Top with your favorite root beer. It’s key to add the ROOT first, then the regular root beer—the carbonation essentially mixes the float.

4. Add another tablespoon of vanilla ice cream and a straw, and serve.

The melon baller is the perfect scoop size for these little shot glasses. We especially like that they say “Shots” on the front.

All it takes is a splash of ROOT, up to 1 tablespoon. You’ll be tempted to just use ROOT, but you’ll need the carbonation of the root beer to make it a true float.

Top it off with root beer, until the foam reaches the neck of the shot glass.

One more mini scoop of ice cream.

Almost ready!

We cut our striped straws in half so they fit the mason jars perfectly.

It gets even better as the ice cream starts to melt.

It won’t take long before the first batch is gone, and it will be time to make more.

If there's one thing The Seaside Baker blogger Jackie Bruchez knows, it's the sweet spot between fresh ingredients and luxurious desserts. In her new cookbook, Decadent Fruit Desserts($22), there is a little something comforting for everyone in more than 60 recipes, such as grilled peaches and a banana-chocolate pot de crème with cognac sauce. At the heart of each recipe is a key fruit ingredient, meant to shine as the star of the show. Bruchez elaborates in the intro of her book, “Transforming fruit, be it apples or oranges or more exotic varieties like dragon fruit, into a decadent, sophisticated, blow-your-mind dessert is the revelation I want to share with you." You don't have to just take our word for it. The paloma tart recipe below takes the tequila-grapefruit drink and morphs it into a bright and snappy multi-layered fruit tart.

Paloma Tart

(Serves 8-10)

Baker's Note: When making the curd, it is necessary to whisk the egg yolks and sugar before adding the citrus juice to avoiding curdling.

Ingredients:

Crust:

  • nonstick cooking spray
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lime zest, freshly grated
  • 1/2 cup coconut, shredded
  • 1 cup unsalted butter, cold
  • 1 tablespoon fresh lime juice

Grapefruit Tequila Curd:

  • 6 egg yolks
  • 1 1/4 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon grapefruit zest
  • 2 cups grapefruit juice, freshly squeezed
  • 1/4 cup cornstarch
  • 3 tablespoon unsalted butter, cold
  • 1 tablespoon tequila, optional

Whipped Cream:

  • 1 1/2 cups heavy whipping cream, cold
  • 1 1/2 tablespoon powdered sugar
  • 1/2 tablespoon lime zest, freshly grated
  • lime and grapefruit wedges, for garnish

Directions:

1. Preheat the oven to 350°F. Lightly spray a 9-inch fluted tart pan with nonstick cooking spray.

2. Make the crust. In a large bowl, mix the powdered sugar, flour, salt, lime zest, and coconut until they're well blended, about 30 seconds. Add the butter and lime juice; mix to combine them until moist clumps form. Press the dough into the bottom and up the sides of the pan.

3. Bake the crust until it's golden brown, about 23 to 25 minutes. Cool it for 10 minutes.

4. While the crust is cooling, make the curd. In a heavy-bottomed, medium-sized pot, whisk the egg yolks and sugar until it's light and pale. Whisk in the salt, grapefruit zest, juice, and cornstarch. Place the pot on the stove over medium heat and cook the curd until it thickens and coats the back of a spoon, about 5 minutes. Remove it from the heat; stir in the butter, one tablespoon at a time, and then add the tequila, if using.

5. Pour the warm curd into the crust; let it sit for 30 minutes, then transfer the tart to the refrigerator to chill for at least 1 hour.

6. Right before serving, make the whipped cream. Beat the heavy whipping cream, powdered sugar, and lime zest on high until stiff peaks form.

7. Dollop the cream onto the tart and garnish it with lime and grapefruit wedges.

As much as I love celebrity couples, I love celebrity sibling relationships even more. And Elle and Dakota Fanning are two sisters I've grown up watching since I first saw Dreamer in 2005. Considering Elle Fanning is only five months older than me, and I have a sister of my own, this is one relationship that feels particularly familiar. And while Elle has also watched Dakota Fanning act since we were kids, Dakota just revealed seeing Elle onscreen is just as special for her.

Here's why Dakota & Elle Fanning get emotional seeing each other onscreen.

Elle remembers "sobbing" during one particularly emotional Dakota Fanning movie.

“When Elle’s in anything, it makes me feel it deeper,” Dakota Fanning said at TheWrap’s Power Women Summit on December 3. “She never can fully disappear into a character totally for me as her sister. She obviously does an amazing job, but I’m always gonna see my little sister a little bit.”

And Elle is just as touched by Dakota's roles, and remembers "uncontrollably sobbing" after seeing Now Is Good, a movie where Dakota's character was dying of cancer. “Because it was my sister, I had a real traumatic reaction after that premiere and the screening,” Elle says. “Obviously the acting, but it was something felt on a deeper level.”

“I’m doing this job, I’m an actor because my sister started before me and I watched her,” Elle continues. “I wanted to do exactly what my big sister wanted to do.”

And their movies have also made an impact on everyone who watches them.

When Brit + Co caught up with Dakota Fanning at the world premiere of The Watchers, I had to ask about one of her most iconic movies: Uptown Girls. "I love it," she says of TikTok memes and edits giving the movie new life. "It's nostalgic for people who are kind of around my age, who grew up watching that movie, I think it's like a comfort movie for people. And so I love that people are still revisiting it and loving it. And maybe now that everyone's older [they're] understanding different things about it."

Dakota starred opposite Brittany Murphy, who also had roles in movies like Clueless, 8 Mile, and Girl, Interrupted. Brittany passed away in 2009 when Dakota was 15. "I loved Brittany so much and I still miss her," she says. "So anytime that she has, you know, a moment where people think about her is also nice."
