These Thai Chicken Lettuce Wraps Are Way Better Than Sandwiches for Lunch

How often do you dutifully prepare yourself lunch the night before (and pack it in one of these awesome adult lunch boxes), then when lunchtime arrives it just looks so dull and uninspiring? Meaning you either: a) Miserably eat it, then binge on a large chocolate cupcake that Andrea the office “baker” made (we’ll let her off if it’s one of these key lime chocolate cupcakes), or b) Head to In-N-Out and go all the way with that Double-Double (yikes).

Ingredients:
Makes 8-10 lettuce wraps
— 1 1/2 Tablespoons vegetable oil

— 1 large chicken breast, cut into small chunks

— 2 cloves garlic, peeled and minced

— 1 thumb-sized piece of ginger, peeled and chopped finely

— 2 Tablespoons soy sauce

— 1 teaspoon fish sauce

— 1 Tablespoon dark brown sugar

— 2 Tablespoons peanut butter

— juice of half a lime

— 1 red chili pepper (we used the Anaheim variety), sliced

— outer leaves from 2 Baby Gem lettuces (or other small-leaf lettuce)

— 1/2 red bell pepper, sliced into matchsticks

— 2 Tablespoons chopped, skinless peanuts

— a few sprigs of cilantro, roughly torn

Instructions:

1. Heat the oil on a high heat in a large skillet and add the chicken. Cook for 5-6 minutes, turning regularly until the chicken is cooked and lightly browned.

2. Add the garlic, ginger, soy sauce, fish sauce, sugar, peanut butter and lime juice to the skillet. Bring to a gentle bubble, then simmer for 2-3 minutes until the sauce thickens and coats the chicken well.

3. Stir through half of the chopped chili pepper slices and cook for another 30 seconds, then turn off the heat.

4. Place the lettuce leaves on a serving plate. Top each with a few slices of red bell pepper, then spoon on the chicken mixture. Top with a few more slices of bell pepper, a few chopped peanuts, the cilantro and a slice of red chili pepper for each wrap. Eat immediately. Alternatively if you want to prepare this ahead for a cold lunch, complete the recipe up to the end of step 3. Then cool the chicken, before putting the lettuce wraps together. Cover and refrigerate for the next day.

Do a bit of arranging, brushing, and drizzling, then let the oven take care of the rest of the work for a dinner that's sure to end up on your regular recipe rotation. We use chopped potatoes, carrots, and red onion in this honey mustard chicken recipe, but you could easily replace 'em with baby new potatoes, baby carrots, and shallots (or scallions) to skip the knife work!

Ingredients for Sheet Pan Honey Mustard Chicken

  • 3 large red-skinned potatoes, chopped into bite-size chunks
  • 2 large carrots, peeled and chopped into bite-size chunks
  • 1 large red onion, peeled and sliced into chunky wedges
  • 4 chicken breasts
  • 3 tablespoons honey
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons brown sugar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 medium head of broccoli, broken into florets
  • 20 asparagus spears
  • Small bunch of parsley, finely chopped

Directions for Sheet Pan Honey Mustard Chicken

1. Preheat the oven to 400 degrees Fahrenheit.

2. Arrange the potatoes, carrots, onion, and chicken breasts on a large sheet pan.

3. Mix together the honey, mustard, and brown sugar. Brush this mixture on the chicken breasts. Drizzle two tablespoons of the oil over the chicken and vegetables, then sprinkle on the salt and pepper. Bake in the oven for 25 minutes.

4. Take the sheet pan out of the oven. Use a spatula to turn the vegetables over, then add the broccoli and asparagus. Drizzle on the remaining oil and sprinkle on another pinch of salt and pepper. Place back in the oven to cook for a further 5-10 minutes until the chicken is cooked through and the vegetables are tender.

As much as I love celebrity couples, I love celebrity sibling relationships even more. And Elle and Dakota Fanning are two sisters I've grown up watching since I first saw Dreamer in 2005. Considering Elle Fanning is only five months older than me, and I have a sister of my own, this is one relationship that feels particularly familiar. And while Elle has also watched Dakota Fanning act since we were kids, Dakota just revealed seeing Elle onscreen is just as special for her.

Here's why Dakota & Elle Fanning get emotional seeing each other onscreen.

Elle remembers "sobbing" during one particularly emotional Dakota Fanning movie.

“When Elle’s in anything, it makes me feel it deeper,” Dakota Fanning said at TheWrap’s Power Women Summit on December 3. “She never can fully disappear into a character totally for me as her sister. She obviously does an amazing job, but I’m always gonna see my little sister a little bit.”

And Elle is just as touched by Dakota's roles, and remembers "uncontrollably sobbing" after seeing Now Is Good, a movie where Dakota's character was dying of cancer. “Because it was my sister, I had a real traumatic reaction after that premiere and the screening,” Elle says. “Obviously the acting, but it was something felt on a deeper level.”

“I’m doing this job, I’m an actor because my sister started before me and I watched her,” Elle continues. “I wanted to do exactly what my big sister wanted to do.”

And their movies have also made an impact on everyone who watches them.

When Brit + Co caught up with Dakota Fanning at the world premiere of The Watchers, I had to ask about one of her most iconic movies: Uptown Girls. "I love it," she says of TikTok memes and edits giving the movie new life. "It's nostalgic for people who are kind of around my age, who grew up watching that movie, I think it's like a comfort movie for people. And so I love that people are still revisiting it and loving it. And maybe now that everyone's older [they're] understanding different things about it."

Dakota starred opposite Brittany Murphy, who also had roles in movies like Clueless, 8 Mile, and Girl, Interrupted. Brittany passed away in 2009 when Dakota was 15. "I loved Brittany so much and I still miss her," she says. "So anytime that she has, you know, a moment where people think about her is also nice."
