Tiffani Thiessen Shares Her Two Favorite Egg Recipes

Tiffani Thiessen is no stranger to the kitchen, despite never going to culinary school. Growing up, she learned how to cook from her mom, aunt, and grandmother when her family would come together to have a meal and reconnect. Or, as they would say, “pull up a chair,” which later became the tagline of Thiessen’s Cooking Channel show Dinner at Tiffani’s and the title of her first cookbook, Pull Up a Chair ($14). While it’s chock-full of approachable twists on classic recipes (like Stuffed French Toast and Boozy Date Milkshakes), Thiessen revealed that it also contains her go-to weekday and weekend egg recipes. Spoiler: They are easy to replicate. “None of my recipes are hard to do at all,” Thiessen told us at a recent even she hosted with Happy Egg Co.

For her Monday through Friday life, Thiessen usually whips up her poached egg toasts with kale. Her reasons? In her backyard, the family has a garden (with kale growing all year long) as well as a chicken coop with eight egg-laying hens, so both ingredients are readily available. “It’s just easy. We do that one a lot,” Thiessen explains. For the weekend, Thiessen makes her curried deviled eggs, which she loves for snacking with company or post-workout. Here’s how you can make both at home.

(Serves 2)

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 2 cups Tuscan kale, thick ribs removed, leaves coarsely chopped or torn
  • juice of 1/2 lemon
  • kosher salt and freshly ground black pepper
  • 2 thick slices of bread of your choice, toasted
  • 1 tablespoon distilled white vinegar
  • 2 large eggs
  • 1/4 cup crumbled feta cheese, for garnish
  • smoked paprika, for garnish

Directions:

1. In a medium sauté pan, heat the olive oil over medium-high heat. Add the kale and lemon juice and cook, stirring, until the greens are wilted, 2 to 3 minutes. Season with salt and pepper. Divide the kale between the slices of toast and set aside.

2. In a medium saucepan, bring 4 cups water plus the vinegar to a boil over medium-high heat. (There should be enough water in the pot to completely cover your eggs after you add them.) Reduce the heat to maintain a simmer. Crack each egg into a small bowl, one at a time, and then bring the bowl close to the surface of the simmering water and gently slip each egg into the water. (I sometimes use a spoon to help push the egg whites closer to the yolk to make a nice, round poached egg.) Cover the pot and turn off the heat. Let the eggs cook for 4 minutes, or until the whites are set but the yolks are still bright yellow and runny.

3. Use a slotted spoon to carefully remove the eggs from the water. Lightly tap the bottom of the spoon on a paper towel to remove excess water from the egg and place one egg on top of each toast. Garnish with crumbled feta and a pinch of smoked paprika.

(Serves 6 to 8)

Ingredients:

  • 12 large eggs, at room temperature
  • 6 tablespoons mayonnaise
  • 2 tablespoons finely chopped shallot
  • 1 teaspoon curry powder
  • 1 teaspoon dry mustard powder
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon cayenne pepper
  • kosher salt
  • finely chopped fresh parsley, for garnish

1. In a large saucepan, arrange the eggs in a single layer and cover with cold water. Bring to a boil and cook for 1 minute. Remove from the heat and let the eggs sit in the water for 15 minutes. Fill a large bowl with ice water and transfer the eggs to the ice bath. Let them cool for 10 to 15 minutes before peeling. With a sharp knife, cut each egg in half lengthwise and carefully remove the yolks. Set the whites aside on a plate.

2. Pass the yolks through a potato ricer or sieve into a medium bowl. Add the mayonnaise, shallot, curry powder, mustard powder, lemon juice, and cayenne to the bowl and stir to make a smooth paste. Season with salt.

3. Arrange the whites, cut-side up, on a clean kitchen towel. Fit a pastry bag with a 1/2-inch French star tip (or cut the corner off a zip-top bag) and fill the bag with the yolk mixture. Pipe about a tablespoon-size rosette of the yolk mixture into the hollow part of each egg white.

4. Sprinkle with finely chopped parsley and serve.

Plenty of cookbooks claim to be uncomplicated, but after years of demonstrating easy recipes for home cooks on The Chew, Hall actually delivered on that promise. You can find all of her ingredients at your everyday grocery store, and you won’t need fancy equipment like a mandoline slicer or the hottest new blending device. That makes it realistic to whip up three different veggie dishes in one night (as Hall often does), like chopped salad with buttermilk dressing, blackened beans with lemon and chile, and smashed potatoes with mustard mayonnaise drizzle.

Vegetables do compose a hefty chunk of the book, but it’s still full of indulgent celebration foods, like meaty tomato mac and cheese and fried shrimp with creamy comeback sauce. There’s also an entire section on beans and several pages devoted to cornmeal for classics like johnnycakes, cornbread, and grits. And if you can get through the savory section before running to the kitchen, you’ll drool all over the desserts pages, which includes banana pudding, sweet potato pie, a homemade version of Little Debbie oatmeal cookies, and a strawberry cake that smells like summer.

And maybe best of all: Carla Hall’s Soul Food is more than just a cookbook: It’s a history of the cuisine. While it would be easy to believe that her fluffy angel biscuits magically appeared from the heavens, Hall makes it clear in the introduction that her recipes date back much further than her lifetime. She explains that soul food, “the true food of African Americans,” originates from slaves, who relied on seasonal vegetables, beans, and grains as their foundational diet. “For this book, I tried to imagine what my ancestors would be cooking from the farm if they were alive today,” Hall writes. “By looking to our roots, I’m showing you how delicious and healthy true soul food is.” These personal stories, dispersed throughout the book, make each bite just as meaningful as it is tasty.

Gingerbread Layer Cake With Lemon Cream Cheese Frosting

(Serves 12)

Go all out for Christmas. This cake combines the warmth of wintry gingerbread with a lemony frosting that tastes like sunshine. When I made this for my family, my nieces and nephews went crazy over it. It was the best gift I could’ve given them.

Make ahead: The cake layers keep at room temperature tightly wrapped for up to 2 days. The lemon curd can be refrigerated for up to 2 days. The assembled cake can be refrigerated for up to 1 day.

Ingredients:

Gingerbread Cake:
  • 4 tablespoons (2 ounces) unsalted butter, softened, plus more for the pans
  • 2 cups all-purpose flour
  • 1 1/3 cups packed dark brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons freshly grated nutmeg
  • 1/2 teaspoon ground cloves
  • 3 large eggs, at room temperature
  • 2 large egg yolks, at room temperature
  • 2/3 cup molasses
  • 2 teaspoons pure vanilla extract
  • 1/3 cup hot water
  • 1/2 cup buttermilk
  • 1/3 cup canola oil
Lemon Frosting:
  • 2 tablespoons freshly grated lemon zest
  • 3/4 cup fresh lemon juice
  • 3/4 cup granulated sugar
  • 3 large egg yolks
  • 10 tablespoons unsalted butter, cut into tablespoons
  • 2 (8-ounce) blocks cream cheese, softened
  • Confectioners’ sugar (optional)

Instructions:

  1. Make the cake. Preheat the oven to 375°F. Butter three 8-inch round cake pans, line with parchment paper, and butter the parchment.
  2. Sift the flour, brown sugar, baking powder, salt, cinnamon, ginger, nutmeg, and cloves into the bowl of an electric mixer fitted with the paddle attachment. In a medium bowl, whisk the eggs, egg yolks, molasses, and vanilla. In a small bowl, stir together the hot water and buttermilk.
  3. Mix the dry ingredients on low speed until well blended. Add the 4 tablespoons butter and the oil and continue mixing on low until the mixture resembles fine crumbs. With the machine running, add the egg mixture and beat just until incorporated, then add the buttermilk mixture in a steady stream. Scrape down the bottom and sides of the bowl and mix again just until evenly combined. Divide the batter evenly among the three prepared pans.
  4. Bake until a cake tester comes out clean, 20 to 25 minutes. When you lightly touch the top of the cake, it should feel a little bouncy but still show the indentation of your finger. Let cool in the pans on wire racks for 10 minutes. Unmold the cakes and place top side up on the racks. Let cool completely.5. Make the lemon frosting. Whisk the lemon zest and juice, granulated sugar, egg yolks, and 6 tablespoons of the butter in a medium saucepan over medium-high heat until bubbles begin to form around the edges of the pan, about 3 minutes. Reduce the heat to medium-low and stir continuously with a spatula until thick enough to coat the spatula, about 10 minutes. Strain through a fine-mesh sieve into a large bowl.
  5. Stir in the remaining 4 tablespoons butter, 1 tablespoon at a time, letting each addition melt before adding the next. Press plastic wrap directly against the surface and refrigerate until cold and stiff.
  6. Beat the cream cheese by hand in a large bowl just until smooth. Whisk the lemon curd to loosen it, then add to the cream cheese. Fold until well combined.
  7. Assemble the cake. Place one cake layer, bottom side up, on a cake plate. Spread one third of the lemon cream evenly on top, leaving a 1-inch rim, and gently press another cake layer, bottom side up, on top. Spread half of the remaining lemon cream on its top, leaving a 1-inch rim; then top with the final cake layer, top side up. You can either dust with confectioners’ sugar and serve with the remaining lemon cream or spread the remaining cream on top. Refrigerate until set, at least 2 hours.

Every Gilmore Girls fan knows that Luke and Lorelai were always endgame. Despite the fact they had to watch each other get into different relationships (while I love Max, I'll never be able to stomach the way Christopher acts ugh). But there's one moment in an early Gilmore Girls episode that teases Luke and Lorelai getting married, and even though I've watched it countless times I never caught it before!

Here's that Luke and Lorelai wedding detail you probably missed in Gilmore Girls season 2.

Gilmore Girls season 2, episode 3, "Red Light on the Wedding Night" opens with Lorelai and Rory tasting Fran's cakes at Weston's Bakery ahead of Lorelai's wedding to Max. And when Fran insists the girls stay to figure out exactly which cake flavor they like the best, sticking firm to the idea that there's nothing more important than your wedding day, Lorelai doesn't bat an eye when she says, "Well, it ain't Guy Fawkes Day." And TBH, Fran's confused response is exactly how I felt the first time I watched this episode.

We all know Lorelai gets cold feet when she realizes she's not actually in love with Max and bails on him before the wedding. After all, it's definitely more memorable than Lorelai's joke, which I've always taken to be a throwaway line (she really does have a random sense of humor). That is, until @dianaathome on Tiktok pointed out that Guy Fawkes Day, a British holiday celebrating the failed Gunpowder Plot that happened in 1605, takes place on November 5 — the same day as Luke and Lorelai's wedding in A Year in the Life.

I can't believe I never caught this! And I'm not the only one. "I don't know if I'm more impressed that someone snuck this in or that you found it!" one user commented, while another says, "It is Helen Pai and Dave Rygalski's anniversary. [Luke and Lorelai's] original wedding date June 3rd is Helen Pai's birthday!" (Helen Pai is the real-life, albeit loose, inspiration for Lane Kim!)

Now, while this is a super fun connection to find, a lot of Gilmore Girls viewers are realizing just how much they dislike Lorelai's behavior in the actual scene (as in, eating all the cake knowing Sookie was already preparing one). And it's sparked a ton of conversation.

"I felt so bad for [Fran]! She put all the effort and make all those adorable and tasty cakes and the two of them are like “Hehe screw ethics we get to eat free cake!”since Sooki was just going to make one for free," one Reddit user says. "Maybe it’s the service industry in me talking but I can’t get over how annoyed I would be."

Another goes so far as to say this scene is why they "I like to think this is the reason she wouldn’t sell the Dragonfly to Lorelai & Sookie. Revenge."

If Fran's cake tasting really was free, then eating her out of house and home just for fun is definitely not cool, Lorelai. (Although I still think it's not as unrealistic as her showing up to Chilton in a tee and shorts).

  1. Position yourself comfortably or sit in a lotus position. Place your left hand over your heart area.
  2. Take a deep breath through your nose, then exhale slowly through your mouth. With each breath, feel your body becoming more relaxed.
  3. Focus on the soles of your feet and imagine an energetic pull grounding you, anchoring you in the present moment.
  4. Take another deep breath, feeling a nurturing energy rising from the ground, reaching up to the soles of your feet. Allow this energy to gently move upward, relaxing and energizing your body—feet, calves, thighs, core, shoulders, arms, neck, face, and head.
  5. Imagine a bright, glowing light in the sky above you. This light represents your Higher Self.
  6. See the light spiraling down toward you, entering through the crown of your head and flowing through your body. As it moves, it changes into a vibrant color that resonates with you.
  7. Take another deep breath and allow the colored light to fill your core center. Visualize it growing brighter and expanding with each breath, filling your entire body.
  8. Imagine the light forming a dome or egg-like shape around your body, extending outward, cleansing your physical and energetic space.
  9. Release any tensions, worries, or negative energy, visualizing them fading away into the ground. Trust the process of transformation.
  10. Continue this visualization as long as you need. When you feel light and neutral, place your hands in a prayer position and silently offer thanks.
  11. Visualize the light around you returning to its source, and when ready, gently open your eyes.

This practice can be done 1-2 times daily, ideally in the morning or before bedtime.
