‘The Final Table’ Winner Timothy Hollingsworth’s Drop Biscuit Recipe Is Easier to Master Than You Think

Chef Timothy Hollingsworth has one impressive resumé. Formally the chef de cuisine at the renowned French Laundry in Napa, California, he won Netflix’s The Final Table cooking competition last winter and currently owns and operates Otium restaurant at the Broad Museum in downtown Los Angeles. Brit + Co sat down with Hollingsworth at Yountville Live in California to talk about life after the show, to learn how his family inspires his cooking, and to score the recipe for those biscuits his restaurant is so famous for.

Brit+Co: How has life changed since winning Netflix’s The Final Table?

Timothy Hollingsworth: There have been great responses from my peers and colleagues. I think people really enjoyed the show. It’s really interesting how many little kids watched the show. That was very surprising to me. There has been an influx of kids wanting to come to Otium and visit us. And that’s been really fun.

B+C: On your Instagram page you’ve been teaching your kids how to cooks simple things like omelets. Can you tell us a little bit more about that?

TH: I try to get them [my kids] involved in little things. Right now my daughter is learning how to crack eggs. Then I whisk it really well and teach her how to whisk afterward. So she’s basically going through the motions that I’m doing. I just want her to watch as I make the omelet and let her help a little bit. For me, doing something as a family is really important. Food brings people together, so I think teaching my kids to cook will be a real priority as I raise them.

B+C: You’re often seen pictured with a grill too. What do you often grill at home?

TH: I love things over a wood fire — that smokiness and char. I grill some things that are fast and easy like steaks or something that smokes all day like a brisket. I also might grill ribs or a whole chicken. I even make cookies on the grill. I just made chocolate chip cookies on the grill with my kids.

B+C: Your restaurant seems to have a lot of Middle Eastern influence. What are some spices that you are inspired by?

TH:Seven spice is one. Everyone has their own ratio. My mother-in-law went to Lebanon. I told her to go to a spice market and get the seven spices whole [rather than ground]. She brought it back. I weighed everything, blended it together, then I started tweaking it a little so it fit the flavor profile that I was looking for.

Another spice I like is zaatar. It’s really incredible because it’s so regional. It doesn’t matter if people are from Armenia, Lebanon, Syria, Jordan, or Israel. Wherever this spice comes from, it’s a blend of wild oregano, wild thyme, sumac, and sesame. If you go to my house right now, I have jars and jars and jars of zaatar, and they’re from different areas in the world. The one that I love the most is from Jordan. I think they use more oregano than thyme. It’s very fluffy, and I love the flavor.

B+C: How did you master your incredible drop biscuits?

TH: I don’t remember this recipe off the top of my head, because I do it by feel. I’ve made these biscuits so many times. It’s just one of those things I grew up making as a kid, and it’s very easy.

There’s a correct ratio. I’ve made it so many times that I can use my hands and know what 2 cups of flour feels like. I can take baking soda and mix it in there and know that’s 1 teaspoon or 1/4 teaspoon or whatever the recipe calls for. Ultimately when you’re making the biscuit, there’s either the appropriate amount of flour or a little bit too much. So as you’re mixing it, you can feel the wetness of the dough. This will help you know that your biscuits are too dry, or you don’t have enough butter in there.

drop biscuits

(Make 8 biscuits)

Recipe Notes: Chef’s original recipe calls for 3 tablespoons of black pepper. We were concerned that might be too spicy, so we reduced it to 1 teaspoon, but do as you see fit!

Ingredients:

  • 2 cups flour
  • 1/4 teaspoon baking powder
  • 3/4 tablespoon kosher salt (coarse grain)
  • 1 teaspoon coarse ground black pepper
  • 1/4 cup plus 2 tablespoons of cold lard or butter, cubed
  • 1/2 cup milk
  • 2 tablespoons buttermilk, plus more for washing over the tops

Directions:

1. Combine all dry ingredients, then add the butter.

2. Use your hands to rub the butter into the flour mixture, until it resembles wet sand.

3. Add wet ingredients in with the dry.

4. Stir until just combined. Do not over mix.

5. Form 8 biscuits. You can roll and form biscuits but Hollingsworth prefers to drop the biscuits. That way there’s a nice crunch to the crust. If you like golden tops, brush them with buttermilk.

6. Bake at 400°F for 25 to 30 minutes.

7. Serve with jam and butter.

I'd like to consider myself a romantic person in every aspect of life. I'm constantly coming up with stories, putting ribbons in my hair, and literally stopping to smell the roses (what can I say, when you see a flower in New York City, you might as well savor it). Needless to say, Valentine's Day (and Galentine's Day) is one of my favorite holidays. Aside from the fact that it provides a brief burst of color in the bleak midwinter, it is also a reminder that no matter how tough life gets, love is always worth celebrating. There's just one catch: I have been single my whole life, which makes the constant stream of date night ideas and partner gift inspo that flood the internet this time of year feel like they're a touch out of reach.

Valentine's Day can be less than thrilling if you feel like you don't have anyone to spend it with, but take it from me: there are more than enough ways to have a great time riding solo. If you've recently gone through a breakup or you're the only single friend left in your group, here's my best advice on tackling the upcoming love season if you're single on Valentine's Day (with a little help from Dr. Jenny Taitz, author of How To Be Single And Happy).

Here's how to fully embrace being in your single era on Valentine's Day

Chloe Williams/Brit + Co

Whether or not we admit it, there's definitely still a stigma around singleness. "Despite the fact that these days we may not need a partner to fulfill our hopes, being single remains so stigmatized, with shows depicting the need to compete to win love and headlines depicting women who are single as in an unfortunate situation," Dr. Taitz says. "It’s key to be mindful of these unhelpful messages to [keep them] from impacting how we view ourselves."

I've been on a few dates as an adult, but I often feel like I've missed out on a lot of the foundational experiences that come with being a young woman. Not to mention that it's easier than I'd like to admit to feel like there's something wrong with me if I'm the common thread through every dead-end romantic situation.

Even if comments from your friends like "They're just not good enough for you" or "You're so independent" have good intentions, not feeling desired is hard. Sometimes you just need to process those emotions in whatever way works best for your wellbeing because singleness is incredibly complex — one day I'm enjoying eating at a restaurant alone, the next a rom-com makes me cry — and as easy as it is to swing between the extremes of total happiness to bitterness, the reality is that I'm usually somewhere in between.

"Days like Valentine’s Day can be incredible opportunities to practice self-validation and self-compassion," Taitz says. "Being single on a day that can pull you to compare or feel less than is a good time to be especially kind to yourself [and act] in ways that remind you that you are enough and don’t need a plus one to feel whole."

Activities that engage your soul will help you feel good *and* romanticize self-care at the same time. I love creating a vision board in my bullet journal to see my dreams on paper, or reminding myself of where my true worth lies. If you're really struggling with feeling lonely, Taitz recommends listing out the areas of your life that matter to you, then writing down the value you want to add to each and mapping out how and why those values matter.

"There’s no way a relationship can be your full sense of worth — that’s not fair to you or the relationship and that’s not accurate in terms of what we know about happiness," she says. "Happiness hinges on being present and engaging in positive actions and having fulfilling relationships — and coupling isn’t the only source of connection (assuming it is almost like limiting your diet to strawberries — it’s not going to fill you and will deplete you)."

There is so much more to my worth than whether I have a romantic partner: I love movies and books, I love talking to my little sister on the phone, and I can spend hours happily in the kitchen listening to music and making a nourishing dinner. There's much more to your worth, too.

My mother constantly reminds me to wait for the Right person, not the Right Now person. There are pros and cons to every phase of life, and I'm very content with the pros right now. Eventually, however, I'm hoping my Valentine's Day charcuterie board for one will become a board for two.

Exes Christina Haack and Tarek El Moussa are back at HGTV, but this time they're competing against each other...alongside Tarek's wife Heather El Moussa. And if you think that's a lot to unpack, get ready! The first episode aired last night (January 29), and it's clear the former spouses aren't just in it for the real estate wins — they're finally opening up about their divorce, Christina's most recent divorce, and more. Their tearful confessions simultaneously broke and mending our hearts last night. Here's what they had to say.

In the first episode of The Flip Off, Christina shared with Tarek that she and Josh Hall officially split, tearfully admitting that she quickly gets into relationships that "aren't right" for her and noting how "horrible" everything's been for her since their divorce in 2016

As Christina and Tarek opened up to one another, the exes eventually came to forgive each other. Christina said, "I know we’re in a good place now, but yeah, we went through a lot of stuff. I don’t think anyone understands just how much stuff we went through. We met when we were so young."

Christina shared that Tarek was her "best friend" before the divorce, and that afterward she lost that and had to be a full-time mom — both of which "really, really, really hurt" her "really affected" her. Afterwards, Tarek said, "I understand that feeling of being a little bit lost. And I acknowledge that I’m a big part, if not the entire part, of all of this."

In a pivotal moment — for Christina and Tarek, but really all of us as fans — she said, "I’m really sorry for s---. I really am. I just want you to know that." Tarek took her knee during the apology, and Christina then asked, "You forgive me?"

Tarek's response? "A hundred percent, yeah."

And it wasn't just Christina apologizing either. Tarek said that he "did a lot of things" too, noting that he "holds zero against" her. In his confessional, Tarek opened up more about the cause for their split. He said, "I got diagnosed with cancer and then I hurt my back. I lost 60 lbs. because I was taking so many opiates and Vicodin and painkillers. I lost my way, lost who I was. I just wasn’t the best husband. I wasn’t the best father. You know, I own my s---. It wasn’t me, but it was me."

In the emotional conversation, Christina told Tarek, "You’re a great dad. I’m really proud of you. You’ve come a really long way. I can see it, you know. You’re so much calmer, you’re so much wiser, for real."

To see these two grow to love and support each other in a new way is truly beautiful! (And so are the houses they continue to flip. 😉)

You can catch The Flip Off on HGTV every Wednesday at 8pm EST.
