You Can Legit Eat This Savory Cheesecake for Dinner

Did you know it’s National Cheesecake day on July 30? Sweet and fruity cheesecakes are, of course, awesome. But we decided to make a delicious savory cheesecake to celebrate the day. With a buttery oat biscuit base and garlic and cheese filling, all topped off with juicy baked tomatoes and fresh basil, this cheesecake stands out in the crowd. Serve it with a fresh salad for a simple make-ahead dinner.

Ingredients:

– 10.5 ounces (300g) rough oatcakes (or similar wheat- or oat-based crackers such as Triscuits)

– ¾ cup (180g) butter, melted

– 2 8-ounce packages full-fat soft cheese

– 4 tablespoons heavy/double cream

– 2 large eggs, beaten

– 1 cup (100g) shredded strong cheddar

– 1 tablespoon chopped chives

– 1 large clove garlic, peeled and minced

– 15 ounces vine-ripened cherry tomatoes

– 1 tablespoon olive oil

– large pinch of salt and pepper

– small bunch fresh basil

– freshly ground black pepper

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place the oatcakes in a food processor and pulse until they form into breadcrumbs (or you can place the oatcakes into a plastic bag and crush them into crumbs using a rolling pin). Add the melted butter and mix again, then press into the base and sides of a round 9-inch spring form baking tin with a removable base. It’s easier to use a straight-edge measuring cup and spoon to get the edges even and everything compressed really well. Put the base in the oven for 8 minutes to pre-bake.
  3. Place the soft cheese, cream and eggs into a mixer and beat until smooth. Stir in two thirds of the cheddar, the chives and garlic. Take the cheesecake base and pour the mixture in the pan. Sprinkle on the remaining cheddar, and bake in the oven for 40-50 minutes, until the center is just set.
  4. While the cheesecake is cooking, place the vine-ripened cherry tomatoes on a baking tray, drizzle over the oil and sprinkle on the salt and pepper. Add them to the oven and cook for 15-20 minutes, until the tomatoes soften and the skins are starting to burst. Remove the tomatoes from the oven and leave to cool.
  5. Once the cheesecake is done, remove from the oven and run a knife around the outside edge. Leave to cool for about an hour, then remove the side of the baking tin. Top with the roasted tomatoes, a handful of torn basil and some freshly ground black pepper.
  6. Serve while still slightly warm, or you can cool completely and then chill before serving (the cracker base will be less crumbly if you chill it). If you’re allowing it to cool, add the basil just before serving.

Serves 4

Switch things up for dinner with a deconstructed spring roll bowl — tender grilled chicken, crisp fresh veggies, and a generous drizzle of your favorite peanut sauce for a flavorful, fuss-free twist!

Ingredients:

  • 4 ounces vermicelli rice noodles, cook according to pkg directions
  • 1/2 pkg Perdue® Fresh Cuts Chicken Breast Strips
  • 1 jar of peanut sauce
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1/2 head of green cabbage, sliced
  • 1 carrot, julienned
  • 2 small cucumbers, thinly sliced
  • 1/2 mango, cubed
  • 1 pkg mung beans
  • 1 avocado, sliced
  • 1 spring onion, sliced
  • 1/3 roasted peanuts, roughly chopped
  • Optional herbs: cilantro, mint, thai basil
  • 1 lime, cut in wedges
  • Hot sauce

Directions:

1. In a medium bowl, combine 3/4 cup peanut sauce (thin with a little water if too thick) and chicken breast strips to marinate for at least 30 minutes.

2. On a grill pan or sauté pan, heat oil over medium heat until shimmering. With tongs, remove the chicken from the marinade and place directly onto pan in one layer. If the pan isn’t large enough, make in batches. Season with salt and pepper.
3. Cook for 3-4 minutes per side, not moving or flipping until well browned. Chicken is ready when an insta-read thermometer reads chicken at 165℉.

4. Transfer grilled chicken to plate to rest while you assemble the bowls.

5. To assemble bowls, equally divide the rice noodles into four bowls, top with cabbage, carrot, cucumbers, mango, mung beans and avocado.

6. Add sliced chicken with any reserved juices, and top with spring onions, peanuts and herbs.

7. Drizzle with peanut sauce (thin with a little water if too thick). Serve with lime wedges and favorite hot sauce.

Zesty Chicken Skewers over Spring Salad

Serves 4

Chicken makes everything better — especially when it’s grilled to perfection and tossed into this vibrant citrus-kissed salad. Packed with spring peas, crisp asparagus, watermelon radishes, and fresh greens, it’s the perfect way to kick off a healthy spring!

  • 1 jar Italian or citrus dressing
  • 1 pkg Perdue® Fresh Cuts Chicken Breast Diced
  • 2 tablespoons olive oil
  • Salt & pepper
  • 1 pkg spring lettuces
  • 1/4 radicchio head, torn in pieces
  • 1 pkg pea shoots, optional
  • 1/2 cup snow peas
  • 1 watermelon radish or 1/2 bunch radishes, thinly sliced
  • 1 carrot, shaved
  • 2 asparagus spears, shaved
  • 2 asparagus spears, 1/2” slices
  • 1 pkg micro greens, optional
  • Goat cheese

1. Soak wooden skewers in water until chicken has finished marinating.

2. In a medium bowl, combine 3/4 cup Italian dressing and diced chicken breast to marinate for at least 30 minutes. Skewer 4-5 pieces of chicken onto each skewer.

3. On a grill pan or sauté pan, heat oil over medium heat until shimmering. Place skewers directly onto pan in one layer, in multiple batches. Season with salt and pepper.

4. Cook for 3-4 minutes per side, not moving or flipping until well browned. Chicken is ready when an insta-read thermometer reads chicken at 165℉.

6. To assemble salad, layer each plate with lettuces, pea shoots, snow peas, radishes, carrot, asparagus and top with micro greens, freshly cracked pepper and goat cheese. Drizzle your favorite Italian or citrus dressing and enjoy!

2. Bake for 15 minutes. Halfway through, flip the chicken. Chicken is ready when an insta-read thermometer reads chicken at 165ºF. Set aside while preparing the tacos.

Bonus Recipe: Buffalo Chicken Wrap ​from Half Baked Harvest!

As a bonus, we're throwing in one of our favorite easy and healthy wrap recipes that pushed all the right buttons on flavor. You'll combine shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, fold them up in wraps, then pan-fry until warm and crispy!

These easy wraps, made by Half Baked Harvest, come together in mere minutes. They're crunchy on the outside, cheesy on the inside. Serve with the deliciously creamy jalapeño lime ranch and additional buffalo sauce! These healthy wraps are great for both lunch and dinner, but equally fun for a game night, too!

First things first: start with the buffalo chicken. Shred up a couple of chicken breasts and toss them with homemade buffalo sauce, Greek yogurt (for creaminess), and fresh herbs. Most buffalo chicken fillings are made with cream cheese, but you can swap in yogurt for a healthier choice.

Ingredients:

  • 1 cup cooked shredded chicken
  • 1/4 cup plain greek yogurt
  • 1/3 cup buffalo sauce
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 4 large (burrito size) whole wheat or gluten-free tortillas
  • 2 cups shredded romaine lettuce
  • 1-2 jalapeños or poblano peppers, chopped
  • 3 green onions, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • Olive oil, for cooking

Ingredients for jalapeño ranch:

  • 1 cup plain Greek yogurt
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños chopped + 2 tablespoons brine
  • Juice from 1 lime
  • 1 teaspoon kosher salt

To assemble:

Make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry. So you've got...

  • One-quarter of buffalo chicken
  • Another quarter wrap of greens n' things
  • A quarter full of ranch
  • And finally a quarter full of cheese
  • Fold it all up into one triangle

Instructions:

  1. In a bowl, combine the chicken, yogurt, buffalo sauce, chives, parsley, and dill.
  2. To make the ranch. Combine all ingredients in a bowl.
  3. To assemble, cut down from the center of the tortilla to the edge. Spread the chicken in the bottom left corner, then add a handful of the lettuce, jalapeño/poblano pepper, and green onions on the top left corner. Spread the ranch on the top right corner, and the cheese on the bottom right corner. Fold the buffalo chicken over the lettuce. Then, working clock-wise, folding that quarter over the ranch. And finally, fold that quarter over the cheese.
  4. Heat a drizzle of olive oil in a skillet, add 1 wrap and cook 2-3 minutes per side until crisp and golden brown. Serve warm with extra buffalo sauce, ranch, and lettuce.
