This tomato confit with garlic and herbs is the best thing you can make this summer. The tomatoes become extra flavorful and juicy, the garlic turns into butter, and the olive oil is delicious drizzled on everything! This recipe is super easy, requiring only 5 minutes of prep time. It's also naturally gluten-free, dairy-free, and vegan. So take advantage of all the summer tomatoes and make this versatile cherry tomato confit asap!

It is no secret that I am (always) VERY excited about tomato season. There is nothing that compares to a freshly picked, vibrant red, and deliciously ripe tomato. All it takes to please me is some bread, thick slices of sweet tomatoes, good olive oil, and some flakey salt. It's the little things in life, right?

If you're at all excited about tomato season, then you absolutely need to try my authentic fattoush salad — I am obsessed with it. I'm all about eating all the fresh tomatoes you can when they're in season, but sometimes you just can't keep up with the abundance of them in the summer, especially if you grow your own. Enter cherry tomato confit, the perfect way to enjoy copious amounts of tomatoes for weeks!

What Is Confit?

Confit, which is pronounced "con-fee", is derived from the French word confire, which means to preserve. Many people think confit refers only to meat that is slowly cooked and preserved in its fat, such as the popular duck confit.

However, confit is a preservation method used not only for meat, but also for fruits and vegetables. In the case of tomatoes, they are slowly cooked in a large amount of olive oil, since they do not have any fat on their own. For a sweet confit, a concentrated sugar syrup is the liquid of choice.

A properly prepared confit can be stored at room temperature for weeks and months, making it an incredible option for preserving an abundance of seasonal ingredients.

What Is The Different Between Tomato Confit And Roasted Tomatoes?

There are a few main differences in the cooking process between tomato confit and roasted tomatoes: First of all, tomato confit is cooked at a very low temperature, usually around 200°F, while roasted tomatoes are generally cooked at a temperature of around 400°F or so. Secondly, to confit tomatoes, you need them fully submerged in olive oil. Whereas to roast tomatoes, you use a small amount of olive oil, just enough to coat them lightly. Thirdly, it takes more than two hours to confit tomatoes, whereas roasting tomatoes at a high temperatures requires a fraction of the time, about 15 minutes.

As a result, the slow cooked tomatoes retain much of their plump shape, color, and freshness. On the other hand, roasted tomatoes lose a lot of their moisture and they burst and shrivel up. They also caramelize due to the higher heat, altering their flavor. Both methods result in delicious tomatoes, but confit tomatoes are extra special and definitely worth trying out if you've never had them before!

Tomato Confit Ingredients

  • 1 ½poundscherry tomatoes
  • 2headsgarlic, peeled (20-25 cloves)
  • 8sprigsfresh thyme
  • 1teaspoonkosher salt
  • 1 ½cupsextra virgin olive oil

Cherry tomatoes: Although you can confit any tomatoes, cherry tomatoes are exceptionally sweet and delicious, and they make the perfect little bites.

Garlic: You can make cherry tomato confit without garlic, but I love the flavor it infuses the oil with. I love to add tons of garlic that way that way I have lots of buttery garlic confit to spread on toast.

Fresh herbs: You can use whichever herbs you prefer. Here I'm making it with fresh thyme, but I also love making it with fresh rosemary or a combination of herbs.

Extra virgin olive oil: Many people say you don't need to use your best olive oil when making cherry tomato confit and that you can use a cheap, mild olive oil. But I have to disagree! A good quality extra virgin olive oil will make it that much more delicious. Plus, we won't be wasting any of the excess oil!

Instructions For How To Make Cherry Tomato Confit

  1. Preheat the oven to 225°F. The key is low and slow so don't up the temperature to rush the process.
  2. Place the cherry tomatoes, garlic cloves, and fresh thyme sprigs in a small baking dish or oven-proof saucepan. Sprinkle salt evenly all over.
  3. Pour enough olive oil until the tomatoes are submerged. It's okay if a little bit of the tomatoes are peaking above the oil, they will shrink down as they cook. Give everything a quick stir and let them settle. If needed, top with more olive oil.
  4. Place them in the oven for 2.5 to 3 hours, or until the tomatoes are soft, slightly wrinkly, but still plump. The garlic cloves should be easily mashed with a fork.
  5. Let the tomato confit cool completely before transferring to sterilized jars. Make sure everything is covered with oil and not exposed to air. Store the airtight jars in the fridge.

How To Use Cherry Tomato Confit

There are so many ways to use up your delicious tomato and garlic confit! Think of them as elevated tomatoes and use them in place of fresh tomatoes in some recipes! Here are some of my favorite ways to eat cherry tomato confit:

  • Labneh toast: Toast up some good, crusty bread, then smear the soft confit garlic cloves on it like butter, spread some labneh all over, and top it with the plump confit tomatoes. You can smash them down if you want and drizzle a little more of the flavorful oil all over. This is probably my favorite way to eat it! If you want it dairy-free, omit the labneh or use a plant-based ricotta.
  • Avocado toast: Top it with cherry tomato confit and a fried egg - it's the ultimate breakfast.
  • Whipped feta: Make some whipped feta and top it with a copious amount of tomato and garlic confit and lots of its olive oil and serve with crusty bread. My guests always devour this one!
  • Pasta: For a quick dinner, boil some pasta in heavily salted water. Then in a separate pan, warm up the tomato and garlic confit with a good amount of its oil. Ladle in some of the starchy pasta water and mix to create a sauce. Drop the pasta in to coat with the sauce and grate some fresh parm on top!
  • Topping for meat: Spoon some tomato confit over grilled chicken or fish to elevate your dinner in a pinch.
  • Grazing board: Place a bowl of cherry tomato confit on a grazing board and enjoy it with crackers, cheese, and charcuterie board.

Siri, play "So High School" by Taylor Swift because on January 26, the Chiefs officially became one of two teams to play in the 2025 Super Bowl and Taylor joined Travis Kelce on the field! There were laughs, hugs, and plenty of smooches, and I felt like I was witnessing the end of a rom-com play out in front of me — all on live TV. This couple makes plenty of appearances together, but I love the joy and chaos of something like a championship win because their interactions feel so authentic. Keep reading to see what Travis and Taylor said to each other after the game!

Here's everything that happened between Taylor Swift and Travis Kelce at the AFC Championship.

Taylor Swift was all smiles during Travis Kelce's post-win interview.

When the Kansas City Chiefs beat the Buffalo Bills on January 26 for the AFC Championship, Taylor Swift looked on as Travis Kelce hopped onstage with Patrick Mahomes and their coach Andy Reid. And not only did Travis give a great speech, but he broke out into a song of his own when he started singing "Get Down Tonight." We love a couple who can do it all!

"Never satisfied baby," Travis said when asked about how it felt to potentially win a third consecutive Super Bowl and break the NFL record. "When you play in front of Arrowhead Stadium like this every single AFC Championship, you kidding me?! Kansas City!"

And on the field, you can see Taylor Swift and Travis' mom Donna Kelce standing and laughing at his excitement.

And this couple just keeps proving how much they love each other.

But as exciting as the speech was, there's a moment that had fans more excited than anything: it looks like Taylor and Travis said "I love you" on the field.

While embracing and sharing a kiss after that win, Travis appears to say, "I love you so much," and Taylor seems to reply with, "I love you. I'm so proud of you" (which you can see in the video, and per People's report.)

All I can think about is Taylor talking at the end of "Daylight" about how she wants to be defined by the things she loves, not the things that she's afraid of, and the way she radiates life, love, and joy in her relationship with Travis Kelce really proves how much light he's brought into her life. To the Super Bowl we go!!!

Are you excited to see this Travis Kelce & Taylor Swift moment? Here's hoping we get another Super Bowl smooch too! Read up on Um, Travis Kelce Just Spilled On His Dream Wedding Amid Taylor Swift Engagement Rumors for more.

  • 1 cup gluten-free or regular all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Ganache

  • 2/3 cup dark chocolate chips
  • 1/3 cup full-fat coconut milk or heavy whipping cream
  • 2 tablespoons reserved spiced wine (see recipe notes)

Sarah Anderson

Directions:

  1. Peel the skin off the pears and remove the stems, seeds, and core. Slice in half. Add water, red wine, cinnamon, and cloves into a saucepan and place the pears in the liquid. Bring the wine mixture to a boil, then reduce to a simmer. Let simmer for 20 minutes, until the pears are tender. Remove the pears from red wine and let cool. Continue simmering until sauce is reduced, and reserve 2 tablespoons for the chocolate ganache.
  2. Preheat oven to 350 degrees F.
  3. Grease two 9-inch springform cake pans with butter or oil and set aside.
  4. Whisk two eggs in a separate bowl and set aside.
  5. In a small bowl, add the coconut milk and apple cider vinegar and whisk thoroughly. Let sit for at least 5 minutes.
  6. In a separate saucepan, melt butter over low heat. Whisk in the coconut sugar then remove from heat and add in the red wine and salt until well mixed. Quickly add in the dark chocolate pieces and stir constantly until the chocolate is melted. Pour the vanilla extract in and whisk again.
  7. Add about one third of the chocolate mixture to the whisked eggs. Mix thoroughly and then pour back into a mixing bowl with the rest of the chocolate mixture.
  8. Add in coconut milk mixture, cocoa powder, flour, baking powder, and baking soda, and mix until well combined.
  9. Pour the cake batter into two greased cake pans.
  10. Slice wine-poached pear halves in quarters and place in your desired design on top of the cake batter in the cake pans.
  11. Bake the cakes for 20-30 minutes.
  12. While cakes are baking, add the dark chocolate and coconut milk or heavy cream to a small saucepan. Heat on low until the chocolate is melted, whisking so that it is well mixed. Add in the reserved wine sauce and whisk again. Remove from heat and set aside.
  13. Remove the cakes from the oven and let them cool completely before removing them from the springform pans. Place one cake on a cake platter or stand, and drizzle some chocolate ganache on top. Then place the second cake on top of the first and pour the remaining chocolate ganache over the top.

Starbucks fans, listen up: the chain just let us know that their spring menu may be coming sooner than you’d think.

If you've also been shelled up inside due to the frigid winter temperatures and find yourself craving everything spring, Starbucks is set to deliver in the coming months with two new menu items plus the return of a certain famed floral flavor.

Scroll on for everything we know about the Starbucks spring menu, plus the exact items to come!

Starbucks

NEW! Iced Cherry Chai

First up on the Starbucks spring menu is the all-new Iced Cherry Chai. We were huge fans of the chain's Iced Pumpkin Cream Chai over the fall, so anything that has to do with chai has our attention. Based on the same, we assume this iced chai beverage will include a cherry-flavored syrup to sweeten up the sip.

Starbucks

NEW! Jalapeño Chicken Pocket

A little birdy (AKA Starbucks!) also told us that there’s a new snack to join the 2025 spring menu. Meet the Jalapeño Chicken Pocket. The chain just dropped a similar-sounding item with their latest winter menu, the Spicy Falafel Pocket, which is essentially a savory pastry stuffed with falafel, creamy hummus, roasted red bell peppers, pickled onions, and a spicy herb sauce. Based on the Jalapeño Chicken Pocket name, it’s likely to be spicy and protein-packed. Yum!

Return of lavender

That’s right – Starbucks is reviving their lavender drinks for spring 2025. Last year, they launched three lavender-tinged bevs: the Lavender Oatmilk Latte (hot or iced), the Iced Lavender Oatmilk Matcha, and the Lavender Creme Frappuccino. We’re crossing our fingers all of them come back to menus, plus perhaps a new lavender offering!

When will the 2025 Starbucks spring menu drop?

Starbucks

The Starbucks spring menu is coming in March 2025. We’ll keep you posted with more official details on the menu items and exact release date!

While Mars retrograde continues, this month proves to be lovely and filled with possibilities. Now that the action planet is still in its backspin motion, it doesn’t mean you should be holding back from visualizing your dreams. Appreciate the stillness and explore different possibilities before deciding what’s right for you. Although you may feel like a sitting duck, I beg to differ. This Mars retrograde proves to be a test of our will by not being impulsive. Luckily, Mars goes direct later this month, so hang on tight before losing momentum.
