It’s time to shine the light on Dad for Father’s Day by making the grill-master himself a yum-tastic meal. That’s where this chicken finger sandwich comes into play! Ingredients:
- 1 hoagie roll
- 1 small tomato
- small bundle kale
- 3 chicken tender strips
- 4-5 slices provolone cheese (pre-sliced)
- 1 teaspoon honey
- 1 Tablespoon Dijon mustard
- 1 cup breadcrumbs
- 1/2 cup flour
- 1 egg
Instructions:
1. Separate the flour, egg (beaten), and breadcrumbs into three different plate stations.
2. Take a single chicken tender and cover it in the flour, egg, and breadcrumb — in that order.
3. Place the tender on top of a foiled cookie sheet and then repeat the process with the rest of the chicken tenders.
4. Place in the oven for 15-20 minutes, flipping the tenders halfway through.
5. While the chicken tenders are cooking, add the Dijon mustard and honey into a small bowl. Microwave for one minute and then whisk the two ingredients together.
6. When the chicken is done, take it out of the oven and let cool.
7. Slice down the middle of the bread, open it up, and line one side with three chicken tenders.
8. Next, add provolone cheese, the sauce, tomato, and kale.
9. Cut into mini sandwiches and enjoy!
