If you want to laugh out loud on your flight, then Crazy, Stupid, Love is definitely the airplane movie you want to choose! It perfectly executes its multiple storylines, and the ensemble cast (which includes Emma Stone, Ryan Gosling, and Steve Carrell) are pure magic together.

Caprese salad is one of my favorite quick and easy salad recipes to make; it’s hard to beat the simple combination of juicy tomatoes, creamy mozzarella and fresh basil. Add a handful of blueberries, though, and you’ll take it to the next level, especially if you drizzle it with a simple balsamic reduction.

The sweetness of the blueberries and the tangy balsamic are perfect additions. Plus, the red, white and blue color scheme means that this easy five-ingredient salad is perfect for your 4th of July party! A no-fuss, people-pleasing salad that also fits the theme — what could be better than that?

Ingredients

Ingredients:
Serves 6

  • 3 cups cherry tomatoes
  • 1 1/2 cups blueberries
  • 1 cup mozzarella pearls
  • 1/4 cup balsamic vinegar
  • Small bunch fresh basil, roughly chopped (or just choose the smallest leaves)

Instructions

Step One

Halve each cherry tomato and add them to a large bowl along with the blueberries and mozzarella pearls. Mix well.

Step Two

Add the balsamic vinegar to a small pan and simmer over a medium heat for approximately five minutes, until it has reduced to a sticky syrup.

Drizzle the balsamic reduction over the salad and serve topped with fresh basil.

Step Four

This blueberry Caprese salad is so easy to make and tastes so fresh and summery. If you’d rather not have to do any cooking at all, you can use the balsamic vinegar straight from the bottle — you’ll probably only need a few tablespoons to dress the whole bowlful. You can make the salad in advance and store it in the fridge until you’re ready, then just add the balsamic before serving. Easy, delicious and seriously festive.
