How to Winterize Your Zoodles

For many of us, 2017 was a doozy, but we here at Brit + Co are ready to hit refresh in 2018! Follow our Hit Refresh series through January for new ideas, hacks, and skills that will help you achieve (and maintain!) those New Year’s resolutions.

Light, crunchy zoodles (zucchini noodles) are a summer staple. Now that sweater season has firmly arrived, there’s no need to pack away your spiralizer along with your summer whites. Whether you’re craving a cozy soup, a pretty bowl meal, or hot and hearty sandwich, your zucchini noodles can still find a place at the table during colder months. Here are some of our favorite ways to winterize zoodles.

Soup’s On

Use zucchini noodles in place of soba or ramen in brothy, Asian-inspired noodle bowls. For extra flavor, marinate them in a bit of soy sauce, toasted sesame oil, and crushed red pepper flakes before adding to your bowl.

Frittata Filling

Frittatas are a quick, filling way to feed a crowd (or just yourself), and they’re as tasty for dinner as they are for brunch. Start by sautéing two spiralized zucchini with one teaspoon olive oil and one tablespoon chopped fresh sage. Add one cup cubed butternut squash. Meanwhile, whisk six eggs with one ounce of Gruyère or Parmesan and a hefty amount of black pepper and salt. Add the egg mixture. Cook for four to five minutes, until the egg mixture is almost set, then transfer to the oven and broil for about three minutes, until the top is lightly browned. (Vegans, you can add your zucchini noodles to chickpea flour quiche!)

Tip: If you’re making quiche, toss your zoodles with a tablespoon of flour before adding them to your filling. This will prevent the excess moisture from your zoodles from making your quiche soggy and water-logged.

Split the Difference

While fully swapping zucchini for pasta might sound appealing to your taste buds in summer, if you’re craving the real deal in winter, we like to split the difference to squeeze in extra veggies. Toss equal parts pasta and zoodles before topping with your favorite sauce. Opt for the hearty ones, like bolognese (swap in lentils if you’re meat-free) or Alfredo.

Fatten Them Up

If you’re adding delicate zoodles to hot dishes, you may find they wilt a bit more than you’d like. Keep them firm and slightly al dente by using a larger setting on your spiralizer. Or, if you prefer wider ribbon-style noodles, use a vegetable peeler. Chunky zucchini noodles are awesome in make-ahead casseroles too.

Favor Curry (and Spice)

Beyond traditional pasta-and-red sauce swaps, look to thick and spicy sauces for your zucchini noodle bowls. Try curries in every color of the traffic light, creamy and piquant peanut butter sauces, or any heat-and-eat Indian simmer sauce.

Tip: For Indian-inspired dishes, sauté zoodles in a bit of coconut oil with ½ teaspoon each crushed coriander and cumin seeds, then top with curries or stews.

Don’t Forget Salads

Create hearty winter salads with a base of zucchini noodles. Start by lightly salting your zoodles to release excess moisture, then rinse and drain well. Top with winter fruit like grapefruit, cranberries, or pomegranate arils, plus a classic vinaigrette and plenty of fresh herbs and cheese, if desired. Try a winterized take on a Caprese-style salad with fresh mozzarella, spiralized zucchini, pomegranate, radishes, and bell peppers.

I'd consider myself a hot chocolate connoisseur. I've sipped rich and decadent drinks at Colonial Williamsburg, whipped up a homemade recipe for Christmas parties, and sampled my fair share of instant hot cocoa packets. So I was shocked when the Whole Foods Hot Chocolate ended up being one of my favorite cocoa options of all time — for only $2 a cup! The hot chocolate offers a smoother, richer taste than other instant cocoas I've tried, and it really offers a bang for your buck.

The delicious Whole Foods hot chocolate is only $2 a cup.

Whole Foods

The Whole Foods hot chocolate (officially named Organic Milk Chocolate Flavor Mix Hot Cocoa Mix. Fancy!) is from the 365 by Whole Foods Market brand, and features 10 packets in a single box. Not only does that mean it's $2 a cup, but it's also easier than ever to whip up a late night beverage. My favorite thing ever is curling up with hot cocoa and a book or TV show in bed!

Instead of a pot or saucepan, all you need is a mug and a microwave. Just heat up your water or milk and mix a packet in! I'm pretty bougie when it comes to hot chocolate, and use equal parts water and soy milk, then add a splash of eggnog. Trust me, it makes the cocoa even richer and more flavorful than it was before.

The hot cocoa packets include organic cane sugar, organic nonfat dry milk, organic cocoa powder, and some sea salt among other ingredients.

You can enter your zip code to find the Whole Foods hot chocolate near you, but you can also order it on Amazon for a quick delivery. And if you're not a fan of the packets, opt for a 12 oz container instead!

One Amazon reviewer says this product is "such a treat," and that it "dissolves without any issue," which is a huge challenge when talking about instant cocoa. "You can control how much of the flavor you want which we like since you just scoop it into your cup from the container," they continue. "Good size for the price. Container seems to last a while too."

"I'm a REALLY PICKY hot chocolate lover," another Amazon review says. "This is good stuff. It blends perfectly and tastes rich. I blend it 50/50 with 365 coffee and a hot cup of milk. Some reviews say it's expensive compared to Swiss Miss. I just checked and this is $6.79 for 12 servings - Swiss Miss Simply Cocoa's cheapest prices is $7.33 for 8 servings. This is a good buy."

"I like it because I can adjust the amount that I use, for myself I use less than is suggested because it is so rich and chocolatey," a third review says. "Price is on point. And product is consistent."

As much as I love celebrity couples, I love celebrity sibling relationships even more. And Elle and Dakota Fanning are two sisters I've grown up watching since I first saw Dreamer in 2005. Considering Elle Fanning is only five months older than me, and I have a sister of my own, this is one relationship that feels particularly familiar. And while Elle has also watched Dakota Fanning act since we were kids, Dakota just revealed seeing Elle onscreen is just as special for her.

Elle remembers "sobbing" during one particularly emotional Dakota Fanning movie.

“When Elle’s in anything, it makes me feel it deeper,” Dakota Fanning said at TheWrap’s Power Women Summit on December 3. “She never can fully disappear into a character totally for me as her sister. She obviously does an amazing job, but I’m always gonna see my little sister a little bit.”

And Elle is just as touched by Dakota's roles, and remembers "uncontrollably sobbing" after seeing Now Is Good, a movie where Dakota's character was dying of cancer. “Because it was my sister, I had a real traumatic reaction after that premiere and the screening,” Elle says. “Obviously the acting, but it was something felt on a deeper level.”

“I’m doing this job, I’m an actor because my sister started before me and I watched her,” Elle continues. “I wanted to do exactly what my big sister wanted to do.”

And their movies have also made an impact on everyone who watches them.

When Brit + Co caught up with Dakota Fanning at the world premiere of The Watchers, I had to ask about one of her most iconic movies: Uptown Girls. "I love it," she says of TikTok memes and edits giving the movie new life. "It's nostalgic for people who are kind of around my age, who grew up watching that movie, I think it's like a comfort movie for people. And so I love that people are still revisiting it and loving it. And maybe now that everyone's older [they're] understanding different things about it."

Dakota starred opposite Brittany Murphy, who also had roles in movies like Clueless, 8 Mile, and Girl, Interrupted. Brittany passed away in 2009 when Dakota was 15. "I loved Brittany so much and I still miss her," she says. "So anytime that she has, you know, a moment where people think about her is also nice."
