Ingredients:
– 8 large apples
– 2 cups blueberries
– 2 lemons
– 1/4 cup granulated sugar
– 2 cups all-purpose flour
– 1 1/2 cups oatmeal
– 2/3 cup brown sugar
– 1 tablespoon cinnamon
– 2 sticks salted butter, chilled and cubed
– 1 cup whole natural almonds
– sliced almonds
Instructions:
1. Preheat oven to 350 degrees F. Cut apples into 1/2-inch pieces. In a large bowl, combine apples, blueberries, the zest of 1 lemon, the juice of 2 lemons and granulated sugar. Stir to combine.
2. In another bowl, combine the flour, oats, brown sugar and cinnamon. Stir together. Add the cubed butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the dry ingredients until large crumbs are formed. Chop almonds and fold them into the crisp topping.
3. Pour the fruit mixture into a greased skillet. Top with the almond crisp mix. Dot the top of the crisp with a few pieces of butter and sprinkle with cinnamon. Bake crisp for 55-60 minutes, until the top is golden and the fruit is bubbly. Sprinkle sliced almonds on top for a finishing touch. Enjoy!
