We love our springtime veggies — peas, artichokes, sugar snap peas, you name it. But we have a special fondness for the bright green bundles of asparagus popping up in our local farmers’ markets. The slender stalks (full of folate, fiber and vitamins A and K, we might add!) are great for crunch-ifying salads, and when blended up with some sweet peas and celery, they make a skinny summer soup that’s pretty bomb [dot] com.
