Avocado Toasts Plus the Simplest Balsamic Dressing Hack

Avocados have achieved a somewhat god-like status over the last few years, and rightly so! They’re high in good fats and packed with vitamins, minerals and micro-nutrients — plus they’re filling and luxuriously tasty too. Today we’re offsetting that delicious creamy texture with salty feta cheese (if you’re feta lovers like us, you’ve got to try this feta-stuffed lamb burger recipe too!), crisp toasted bread and juicy tomatoes. It’s amazing just like this, but the toasts are taken to a new level with a simple balsamic reduction (which makes even the cheaper balsamic vinegars taste great!).


Ingredients:

Serves 2-4

— ¾ cup balsamic vinegar

— 1/3 cup brown sugar

— 2 ripe avocados

— 1 teaspoon lime juice

— 1 clove garlic, peeled and minced

— pinch of salt and pepper

— 4 pieces of toasted bread, cut in half

— 8 grape tomatoes, sliced into halves or quarters

— 3 and 1/2 ounces feta cheese, crumbled

Instructions:

1. Place the balsamic vinegar and brown sugar into a small, non-reactive saucepan. Bring to a boil, stirring a few times to help the sugar to dissolve. Bubble for 5-6 minutes until reduced by half. Turn off the heat (it will thicken slightly and go a little sticky as it cools).

2. Peel and de-stone the avocados, slice, then place the slices in a bowl. Roughly mash with a fork (leave some lumps in there for texture). Add the lime juice, garlic, salt and pepper and stir together.

3. Place the toasted bread on a large plate. Top with the avocado mixture, followed by the tomatoes and crumbled feta. Drizzle with the balsamic reduction before serving.
