Ingredients:

For the waffles (makes 4 large)

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 2 large eggs
  • 1 cup whole milk
  • 4 Tablespoons melted butter
  • 1 teaspoon vanilla extract
  • non-stick cooking spray
  • sprinkles to decorate

Instructions:

  1. Put the flour, baking powder, salt, and sugar in a bowl and mix together using a balloon whisk.
  2. Put the eggs, milk, melted butter, and vanilla extract in a separate small bowl and whisk together.
  3. Pour the liquid into the dry ingredients and whisk until just combined.
  4. Preheat your waffle maker and spray with non-stick cooking spray.
  5. Add a ladleful of batter in the center of the waffle maker and cook 2-3 minutes or until crisp and golden.
  6. Repeat until you have used all the batter.

Ingredients:

For the glaze

  • 7 ounces icing sugar, more if needed
  • 3 1/2 ounces mixed frozen berries
  • juice of half a lemon

Instructions:

  1. Put the icing sugar in a large bowl.
  2. Pour the lemon juice over the berries and heat in a microwave for 60 seconds. Mash the berries until they start to release their juices.
  3. Strain the berry juice into the icing sugar and mix together using a spoon. The glaze needs to be fairly thick — if it’s too thin, add a little more icing sugar. If it needs thinning out, add a few drops of water.
  4. Dip the waffles into the glaze, letting any excess drip off. Place on a wire rack with a tray under it to catch any drips.
  5. Add your sprinkles while the glaze is still wet. Leave to set and serve.
