Your Mother’s Day Brunch Needs This Berry Glazed Donut Waffles Recipe
Mother’s Day is nearly here… time to shower your mom with love, gorgeous flowers, handmade gifts… oh, and some berry glazed donut waffles! These bright pink wonuts are guaranteed to brighten your mom’s day, especially if you add some sprinkles — because no one is ever too old for sprinkles. Simply make your favorite waffle recipe, create a berry-tinted glaze, and get dipping.
Ingredients:
For the waffles (makes 4 large)
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup sugar
- 2 large eggs
- 1 cup whole milk
- 4 Tablespoons melted butter
- 1 teaspoon vanilla extract
- non-stick cooking spray
- sprinkles to decorate
Instructions:
- Put the flour, baking powder, salt, and sugar in a bowl and mix together using a balloon whisk.
- Put the eggs, milk, melted butter, and vanilla extract in a separate small bowl and whisk together.
- Pour the liquid into the dry ingredients and whisk until just combined.
- Preheat your waffle maker and spray with non-stick cooking spray.
- Add a ladleful of batter in the center of the waffle maker and cook 2-3 minutes or until crisp and golden.
- Repeat until you have used all the batter.
Ingredients:
For the glaze
- 7 ounces icing sugar, more if needed
- 3 1/2 ounces mixed frozen berries
- juice of half a lemon
Instructions:
- Put the icing sugar in a large bowl.
- Pour the lemon juice over the berries and heat in a microwave for 60 seconds. Mash the berries until they start to release their juices.
- Strain the berry juice into the icing sugar and mix together using a spoon. The glaze needs to be fairly thick — if it’s too thin, add a little more icing sugar. If it needs thinning out, add a few drops of water.
- Dip the waffles into the glaze, letting any excess drip off. Place on a wire rack with a tray under it to catch any drips.
- Add your sprinkles while the glaze is still wet. Leave to set and serve.
