Last Minute 4th of July Dessert Alert: Smashed Berry Shortcake
If you’re scrambling for a last minute treat to bring to the BBQ (this weekend, next… any time really ;), scramble no more! This festive, patriotic treat is perfectly summery and super easy to make. Oh, and the addition of fresh, healthy fruit doesn’t hurt either. All you need is 30 minutes (or less!), some Pillsbury biscuits, fruit and whipped cream to make this scrumptious dessert!
Ingredients:
– 1 can Pillsbury biscuits
– fresh blueberries
– fresh raspberries
– whipped cream
Start off by preparing the biscuits for baking. Take each round and cut it in half, using your fingers to shape it back into a disc. Don’t worry if it doesn’t look perfect, we’re going to fix it later. Then, prepare according to the directions. Let them cool and then use a round cookie cutter to make it a perfect circle. Cut in half, hamburger style.
Now, it’s time to build the shortcakes! Gently smash the raspberries or blueberries with your fingers and layer on the bottom piece of shortcake. Add a layer of whipped cream, top with a few more berries, and then top it off with the other half of the shortcake.
So easy!
