Conquer Black Friday Hangry-ness With These No-Bake, Gluten-Free Chocolate Cherry Energy Bars
Feel the thought of running over someone with your cart creeping into your mind this Black Friday? Take a bite of one of these no-bake, gluten-free chocolate cherry energy bars and feel the hangry melt away. These energy bars fit easily into your bag and give you that boost to cruise through Black Friday deals. Combine Medjool dates, almonds, salt and cocoa powder into a food processor and pulse until you’ve created a chunky mixture. Sprinkle in some dried cherries and vanilla extract, give the processor a few more pulses and add a bit of water to bring the mixture together. Scoop the bar mixture into a square container, then chill for a few hours. Cut the bars into equal shapes and you’re ready to roll this Black Friday with the portable, healthy snack you need to make it through a dawn-to-dusk day.
Ingredients:
Makes nine bars
- 2 cups Medjool dates, pitted
- 2 1/2 cups almonds
- 1/2 teaspoon salt
- 3/4 cup cocoa powder
- 1 cup dried cherries
- 3 Tablespoons vanilla extract
- 1/2 cup water

Instructions:
1. Add dates, almonds, salt and cocoa powder to a food processor and chop ingredients until a semi-fine mixture develops.
2. Add the dried cherries and vanilla extract to the food processor and give it a few quick pulses.
3. Add the water a little bit at a time to the food processor until the bar mixture is moist (you may need to add more or less water depending on your mixture; you’re looking for a sticky consistency).
4. Remove the mixture from the food processor by scraping down the sides and place it into a 9×9-inch square container. Flatten down the top of the mixture with a wooden spoon until it’s even.
5. Chill in the bar mixture fridge for two hours or until firm. Cut the bars into squares and carry them with you as a boost of energy as you dive for deals this Black Friday!
