What’s Better Than Ice Cream Cake? Cake Batter Ice Cream!
Who needs cake when you can make cake batter ice cream? This hack on Cold Stone Creamery’s most popular flavor, Cake Batter Batter Batter, is super easy and customizable. Simply pick your favorite cake mix and add it to this recipe. Enjoy a scoop by itself or, dare we say, on a cupcake! :)
You’ll need an ice cream maker or you can always do it the old-fashioned way with ice and rock salt in a freezer bag or tin can. Be sure to follow the instructions of your ice cream maker as they all tend to vary.
Ingredients:
– 1 cup of whole milk, very cold
– 1/2 cup of granulated sugar
– 2 cups of heavy cream, very cold
– 2 teaspoons of vanilla extract
– 3/4 cup of cake mix (pick your favorite, we used Funfetti!)
You can substitute low or nonfat milk instead of whole, but the higher fat content does keep the ice cream soft. Also feel free to adjust the amount of sugar and cake mix to your taste preference. The amounts above give the ice cream an awesome cake batter taste that isn’t overly sweet. Remember there’s already sugar in the cake mix too!
Combine the milk and sugar in a bowl until sugar is dissolved. Stir in the vanilla extract and heavy cream. The alcohol in the vanilla extract prevents the ice cream from becoming too hard.
Add in your favorite cake mix and stir until well blended. If your finished mixture isn’t cold, allow to chill in the refrigerator for 30 minutes.
Pour mixture into your ice cream maker and allow to slow churn for 25-30 minutes. Once finished, transfer to a freezer safe storage container and allow to freeze for at least 4 hours.
We love the rich and creamy texture the cake mix adds to this ice cream.
The cake batter flavor is obviously perfect with a cupcake! Put a scoop of ice cream on top of your next batch instead of frosting :)
Or make a delicious sundae covered in your favorite toppings. Chocolate fudge, whipped cream, chocolate chips, cherries, nuts, cookie dough or sprinkles. Maybe even mix in a few pieces of cake!
