Live Your Fullest Life With This Churro Waffle Ice Cream Sandwich Recipe
Hi guys! Cassidy here, with a very important PSA. We’re no stranger to a great food hybrid at Brit + Co — from sushi donuts to s’mores fries, we’ll try anything. This week at the office, we combined two glorious foods into the most decadent, delicious sweet treat. Churros and waffles came together in the best way possible and created the churro waffle ice cream sandwich! I mean come on, so much goodness in one recipe! It’s the perfect dessert to serve this summer.
Ingredients:
For the churro waffle mix
- 1 Tablespoon cinnamon
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 cup butter
- 2 eggs
- 2 cups flour
- 1/2 cup heavy cream
- 1 cup milk
- 1 cup sugar
Instructions:
Mix all the dry ingredients in a bowl.
Next, mix in the milk, heavy cream, eggs, butter, and vanilla with the dry ingredients. At this point it will already smell like churros in your kitchen!
Use a heaping 1/2 cup of the mix for each waffle.
Cook until they turn a nice golden brown.
Cut the waffle into four sections and get ready to whip up your toppings.
Ingredients:
For the churro waffle toppings
- assorted cereal
- vanilla ice cream
- 1 cup sugar
- 1/4 cup cinnamon
- 1 bag white chocolate chips
- food dye
- 1/2 cup butter
Instructions:
To make the traditional churro topping, mix together the cinnamon and sugar in one bowl and melt 1/2 cup of butter over the stove or using the microwave.
Dip waffles into melted butter and then into the cinnamon/sugar mixture.
These little guys are coming along really nicely!
Divide white chocolate chips into separate bowls to melt.
*Pro tip: Add a splash of vegetable oil to the chocolate before melting in the microwave for an extra smooth consistency. Once the white chocolate is melted, add the food dye. I went with purple, blue, and pink.
Dip the waffles into the chocolate and add any and all the fun toppings.
Repeat until all your waffles are ready to be assembled into sandwiches.
So decadent, in the absolute best way possible.
