Eat healthy and exercise more. We’re betting these are a few of your New Year’s resolutions. Well, we’re right there with ya AND here to help you reach your goals. As part of our #31DaysofDIY series, we’re going to show you how to make Coconut Almond Chia Granola. Bonus: You can make granola bars or cereal (or both!) with this recipe. Packed with nuts, seeds, dried fruit and more, this granola is the perfect post-workout power-up!

We’ve challenged ourselves to make or learn something new every single day for the month of January, and we’re inviting all of you along for the ride. From DIY basics like Sewing 101 to learning to design and laser cut our own stencils, we hope this month of making inspires you to make all year long.
Ingredients:
Preheat oven to 325 degrees F. Line a 9×13 baking pan with parchment paper. In a large bowl, combine the oats, cereal, almonds, shredded coconut and chia seeds.
- 2 1/2 cups rolled oats
- 1/2 cup sliced almonds
- 1 cup brown rice crisps cereal
- 1/4 cup chia seeds
- 1/2 cup unsweetened shredded coconut
- 1 cup creamy almond butter
- 1/4 cup honey
- 1/3 cup coconut oil
- 2 teaspoons vanilla extract
- 1 cup dried cherries
Instructions:
- Preheat oven to 325 degrees F. Line a 9×13 baking pan with parchment paper.
- In a large bowl, combine the oats, cereal, almonds, shredded coconut and chia seeds. In a microwave-safe measuring cup, combine the coconut oil, honey, almond butter and vanilla. Microwave for 30-45 seconds. Pour over the dry ingredients. Mix together with a spatula. Fold in the dried cherries.
- Press the mixture into the baking pan. Bake for 15-20 minutes. Let cool. Cut half of the pan into bars. Crumble the other half of the pan into bowls to make granola. Top with milk and fresh fruit. Enjoy!
In a microwave-safe measuring cup, combine the coconut oil, honey, almond butter and vanilla. Microwave for 30-45 seconds.
Pour wet ingredients over the dry ingredients. Mix together with a spatula. Fold in the dried cherries.
Press the mixture into the baking pan. Bake for 15-20 minutes.
Let cool.
Cut half of the pan into bars—the perfect on-the-go treat!
Crumble the other half of the pan into bowls to make granola.
Top with milk and fresh fruit.
We’ll eat this for breakfast, lunch or dinner ANY day.
