Colorful Coconut Cups for Spring
Can you tell that we love making treats for Easter? Well we’re back at it, and this one’s the easiest one of the bunch. Just 1 bowl plus 3 ingredients and your favorite egg-shaped candy. Wrap these with cellophane and a pretty ribbon, and hand out to family, friends, and colleagues as a sweet Easter gift.
Ingredients (makes 6):
– 1/2 to 3/4 cups sweetened condensed milk
– 1 teaspoon vanilla
– 3 cups packed sweetened flaked coconut
– jelly beans, robin’s eggs, or other egg-shaped candy
Preheat oven to 300 degrees. Line a baking sheet with a Silpat or parchment paper. Lining any pan you are using is a total must here or your nests will stick. Not to worry, you can get parchment at your local Whole Foods and most grocery stores. Add it to your baking and cooking supplies to save you tons of clean up time when making everything from roasted vegetables to cookies.
Stir together condensed milk and vanilla in a large bowl. Add coconut and mix until combined.
Scoop and tightly pack coconut mixture using a large spring-loaded ice cream scoop.
Place coconut mounds onto the lined baking sheet. Gently make a bowl shape with your index finger. Pinch the sides of the nests to make them sturdier.
Bake at 300 degrees for 20 to 30 minutes until golden brown, rotating halfway through. Let cool and fill with your favorite egg-shaped candy!
