This Creme Egg Rocky Road Recipe Will Brighten Up Your Easter
Cadbury Creme Eggs are only available for a few months each year, so when I see them in the shops I tend to go a bit overboard, and completely fill my basket. Of course, they’re delicious eaten on their own, but they’re also great for decorating all kinds of Easter desserts — cakes, brownies, cookies, you name it! Here I used them to decorate some Easter rocky road — along with a few Cadbury Mini Eggs, they make for a colorful, spring-like treat that’s as gooey and chocolatey as they come.
Ingredients:
- 10 ounces milk chocolate
- 2 Tablespoons unsalted butter
- 1/3 cup maple syrup
- 1 cup mini marshmallows
- 1/2 cup raisins or dried cherries
- 1 1/2 cups coarsely crushed Rich Tea biscuits or Graham crackers
- 3 1/2 ounces white chocolate, melted
- 1 cup Cadbury Mini Eggs
- 4 Cadbury Creme Eggs, halved
- colored sprinkles
Instructions:
1. Add the milk chocolate, butter, and maple syrup to a small saucepan, and melt over a low heat, stirring regularly.
2. When the chocolate mixture is smooth and glossy, add it to a large mixing bowl with the mini marshmallows, dried fruit, and crushed Rich Tea biscuits. Mix thoroughly to combine.
3. Spread the mixture out into a lined, lightly greased baking tray, then drizzle with melted white chocolate.
4. Decorate the rocky road with Cadbury Mini Eggs, halved Cadbury Creme Eggs, and colorful sprinkles.
5. Chill in the fridge for several hours, until completely set. Cut into squares to serve.

Don’t worry if the marshmallows start to melt a little with the heat of the chocolate — they’ll just make your rocky road extra gooey! Or, if you’d rather keep the marshmallows whole, allow the chocolate mixture to cool a little before adding it to the bowl.
Spread the mixture out into a lined, lightly greased baking tray, then drizzle with melted white chocolate.
Decorate the rocky road with Cadbury Mini Eggs, halved Cadbury Creme Eggs, and colorful sprinkles.
Chill in the fridge for several hours, until completely set. Cut into squares to serve.
Remember, this Creme Egg rocky road is super rich and chocolatey, so don’t feel you need to cut the pieces too large! You should get at least 12 pieces from this batch.
And there you have it — an impressive Easter dessert that couldn’t be easier to make! This rocky road looks so fun and colorful, but really the Mini Eggs and brightly colored sprinkles do all the hard work for you. A few pastel colors go a really long way in making a fun Easter treat.
Feel free to adapt this recipe however you see fit — use different dried fruits, add chopped nuts, extra chocolate chips… there really are no rules when it comes to rocky road!
