Skip Takeout and Cook Up This Easy, Quick Noodle Dinner Instead
For some, the kitchen can seem pretty intimidating: There are thing-a-ma-bobs and whatcha-ma-call-its and don’t even get us started on that mixture-blender-thing ;) And although you may be afraid to try anything new because you are still trying to figure out how to properly cook a grilled cheese with bacon (yum!), this dish is so simple and delicious, you won’t believe you actually made it yourself. If you are a big fan of Asian cuisine but are tired of ordering from the Chinese restaurant down the street, then give this recipe a go for a whole new experience that involves soba noodles, veggies and a homemade dressing that you can literally put on everything.
Ingredients:
Pasta:
— 1 bundle of soba noodles
— 1 hard boiled egg
— 1/4 cup carrots
— 1/4 cup mushrooms
— 1/4 cup spinach
Dressing:
— 1/2 tablespoon rice vinegar
— 1 Tablespoon toasted sesame seeds
— 1 Tablespoon soy sauce
— 1/2 teaspoon honey
— 1/4 teaspoon garlic paste
— 1/2 teaspoon of minced garlic
— 1 pinch of salt
Instructions:
1. Combine all the ingredients for the dressing into a medium size bowl. Whisk until everything is combined and put aside.
2. Hard boil the egg for about 9 minutes.
3. While the egg is cooking, cut up the carrots.
4. In a sauce pan over medium heat, pour a teaspoon of oil olive into the skillet and add the mushrooms, spinach and carrots. Mix together and let it cook for about 10 minutes or until the vegetables are soft.
5. When the veggies are almost finished, cook soba noodles for about 4 minutes in a large pot.
6. Once the noodles are cooked, place them in a bowl.
7. Add the veggies and the hard boiled egg.
8. Pour the dressing all over the dish. Yum!
Combine all the ingredients for the dressing in a medium size bowl.
