Celebrate The 4th Of July With Our Firecracker Cupcakes

We’re getting ready for the 4th of July at Brit + Co., from making red, white, and blue kite runners to rounding up the best 4th of July desserts and playing fun lawn games! Now we have a “poppin” sweet treat for you — Firecracker Cupcakes! Just use Poprocks or sprinkles to make your cupcakes explode with fun!
Ingredients
Target
- 1 box white cake mix
- 3 eggs
- 1 1/4 cups of diet Sprite
- 1 tub frosting (white or vanilla)
Toppings/Fillings

- Poprocks
- Sprinkles
- Sugar Gems
- Color Mist
Instructions
- Place mix, eggs, and Sprite in a large bowl. Beat on medium speed until blended.
- Divide mix between 24 cupcake holders, filling about 3/4 of the way full. Bake according to package directions.
- Let the cupcakes cool and then remove a circle of cake from the top. Set aside.
- Pour in the Poprocks or sprinkles. We found the Poprocks get a little too moist in the cupcake and lose some of their “pop”. Sprinkles would make an excellent substitute.
- Top with a dollop of frosting and then cover with the cake lid. Decorate with sprinkles, Poprocks, Wilton Sugar Gems, or Wilton Color Mist.
All that's left to do now is have a poppin' 4th of July!!
