Get Your Rainbow Fix With This Funfetti Waffle Sandwich

Want to combine your rainbow dreams and funfetti fantasies into one? Look no further than this colorful waffle sandwich with a funfetti cream. From martinis to macarons, funfetti is taking over everything… and we have no complaints. This treat combines funfetti cake mix, buttermilk, vegetable oil, eggs, vanilla and sprinkles with a steaming hot waffle iron and homemade funfetti cream to create a dessert that would make any rainbow junkie proud. Ready your sweet tooth and grab all the colors, and let’s get to it!

Ingredients:

Makes 12 waffle sandwiches

For the waffles:

  • 1 box funfetti cake mix
  • 1 cup low-fat buttermilk
  • 1/2 cup vegetable oil
  • 3 eggs
  • 3 teaspoons vanilla
  • 1/2 cup sprinkles

For the funfetti cream:

  • 4 Tablespoons unsalted butter at room temperature
  • 4 Tablespoons vegetable shortening
  • 3 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 2 Tablespoons heavy cream
  • 1/2 cup nonpareil sprinkles

Instructions:

1. Heat up a nonstick waffle iron and spray with cooking spray. Combine the funfetti cake mix, buttermilk, oil, eggs, vanilla and sprinkles in a stand mixer bowl, then beat on medium speed for 2-3 minutes.

2. Scoop 1/2 cup of the funfetti waffle mixture into the heated waffle iron and cook until golden brown, then set the waffles on a wire rack to cool.

3. Once the waffles are done, mix the butter, vegetable shortening, vanilla and salt together on medium speed in a stand mixer bowl until the mixture comes together.

4. Add the powdered sugar, about a 1/2-cup at a time, while continuing to mix on medium speed (make sure to keep scraping down the sides of the bowl to incorporate all powdered sugar).

5. When all the powered sugar is incorporated, add two tablespoons of heavy cream and mix until combined (you can add a few more tablespoons to the frosting until it’s moist).

6. After the frosting mixture is moist, add the nonpareil sprinkles and mix until combined.

7. When the waffles are cool, break them into quarters. Spread some of the funfetti buttercream on one of the waffle quarters, then top with another waffle quarter to make a sandwich. Dive into these funfetti waffle sandwiches that are just as tasty as they are colorful!
