This Fluffy, Gluten-Free Cloud Bread Will Take You to Cloud Nine
I will be the first to say that I will never go gluten free. After all, gluten is my favorite food! But when I tried this gluten-free “cloud bread recipe,” I was on cloud nine. This bread is so fluffy and soft, you’ll never guess that it contains no wheat. We used The Wicked Noodle’s cloud bread recipe to make our own loaves shaped like clouds! They only require a few ingredients and take about 30 minutes to make. Although cloud bread is not firm enough to hold heavy sandwich fixings, it’s a perfect replacement for your morning toast. Top a slice with an avocado (for a gluten-free version of avocado toast), peanut butter and bananas or just butter and jam — the sky’s the limit (pun intended)!
Ingredients:
— 3 eggs, separated
— ¼ teaspoon cream of tartar
— 2 ounces cream cheese, softened
— 1 Tablespoon white sugar
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
2. Beat the egg whites and cream of tartar together in a bowl until stiff peaks form.
3. Mix egg yolks, cream cheese and sugar together in a separate bowl using a wooden spoon, then mix with a whisk or a hand-held egg beater until mixture is very smooth and has no visible cream cheese. Gently fold egg whites into the cream cheese mixture, taking care not to deflate the egg whites.
4. Carefully scoop mixture into a piping bag. Pipe clusters of circles onto the baking sheet to form cloud-shaped “loaves.” The batter will be really runny so your loaves may not be perfect, but hey — neither are actual clouds!
5. Bake in the pre-heated oven until lightly browned, about 20 minutes.

All done! Spread a little jam on my bread, and I’m feeling good about this cloudy day.
