Healthy Hacks: Oven-Baked Green Bean Fries With Garlic Aioli
Summer’s just around the corner and that means that healthy eating is more on the mind than ever. While we’re allllll about a good ‘ol basket of crispy french fries, sometimes we crave a healthier alternative that won’t put us in a food coma for five hours. Cue, oven-baked green bean fries! These are baked to cut out oil and covered with a scrumptious cornbread stuffing that adds a whole new dimension of flavor. Enjoy!
Ingredients:
– 2 cups green beans, washed and dried
– 1 bag of cornbread stuffing
– 1 egg, beaten
– 1/4 cup light mayo
– 1/4 cup greek yogurt, plain
– 3 cloves garlic, minced
– 2 1/2 tbsp lemon juice
– 1/2 tsp salt
– 1/2 tsp freshly ground black pepper
You knew you needed a reason to buy stuffing in April… ;)
First, preheat the oven to 375 degrees F. Then, crush the cornbread stuffing with a rolling pin until it becomes like a fine dust/powder. Dip your green beans in the egg, then roll in the stuffing. Lay on wax paper to prepare for baking.
Bake for 20 minutes, or until the green beans are a golden brown.
While you’re baking, prepare the aioli! Mix together all the ingredients and let sit in the fridge for about 30 minutes. Serve together.
