Green Velvet Guinness Cupcakes with Baileys Buttercream
Can you get a more Irish dessert than Green Velvet Guinness Cupcakes with Baileys Buttercream? Well, maybe if we threw some Jameson in there as well. But putting them in a glass beer mug and little push-pop shooters definitely ups the St. Patty’s Day factor. You should totally make these for your party this weekend!
Ingredients:
Cake
– Yellow cake mix
– 1 cup Guinness
– 3 eggs
– 1/2 cup butter, softened
– 2 tablespoons unsweetened cocoa powder
– Green food coloring
Frosting
– 8 ounces cream cheese
– 1/2 cup butter, softened
– 6 cups powdered sugar
– 1 teaspoon vanilla
– 1/4 Baileys Irish Cream
Make the cake according the package directions, substituting the water for Guinness and add 2 tablespoons of unsweetened cocoa powder.
Add green food coloring and then bake according to the box directions.
While the cakes are baking, start the frosting. Cream the butter and then cream cheese; gradually mix in the powdered sugar, vanilla, and Bailey’s.
That looks like some delicious frosting :)
Let cakes cool slightly and then turn out on a cutting board. Use a cookie cutter or glass the size of your mug to cut your first cake layer.
Gently push the layer to the bottom of the mug.
Pipe a dollop of frosting on top of the cake layer.
Repeat the process and then drizzle with a little caramel and mini shamrock sprinkles.
Mmmm delish.
For the push pop shooters, just repeat the same process but use the push pop itself to cut the cake layers.
You have to admit those are pretty cute, right?
