Grilled Cheese & Tomato: America’s Sweethearts
Today is National Grilled Cheese Day! And, as it turns out, April is National Grilled Cheese MONTH! A whole month devoted to the best comfort food around? Yes please. Pair a triangle of grilled cheese with tomato, and you're happy as a clam. But what about getting a little more playful with how you serve the nation's most adored culinary couple?
Ingredients:
– bread (multigrain and white)
– cheese (provolone and cheddar)
– cherry or heirloom tomatoes
– tomato soup
– basil
First up, Grilled Cheese Kebabs.
Grill up your grilled cheese in a skillet or panini maker. If using a mild cheese like provolone, we recommend a sprinkle of salt and pepper on the top layer of cheese. We recommend charring your grilled cheese a little bit to give it a smoky flavor.
Cut up your grilled cheese into about 1 1/2 inch squares. Skewer it up with heirloom tomatoes and basil and you're done.
Next, Grilled Cheese Hearts & Tomato Soup.
We always recommend cooking tomato soup from scratch but, if you're in a pinch, Trader Joe's and Whole Foods both have awesome ready-made soups in the grab-and-go section.
The twist here is simply a novelty cutter. We used white bread and cheddar for this to keep it as classic as possible. Once your sandwich is grilled, use this adorable heart-shaped sandwich cutter to make your hearts.
Cut a little notch at the bottom of each, place on a bowl of soup and serve.
Last, Grilled Cheese Croutons and Tomatoes on Mixed Greens.
This is what we'll call the "healthy" route. Grilled up your grilled cheese. Once it's done, chop it up into crouton size pieces.
Mix up a plate of greens and tomatoes and top with grilled cheese croutons. Delicious!
