Get Festive AF With Healthy Santa Boot Print Cookies
These Santa boot print cookies are no ordinary Christmas cookie; they’re healthier and have a bit more whimsy. Because they’re made in a waffle iron, the cookies get little dimples that create a boot print shape, and a light dusting of powdered sugar suggests the print is covered in snow. Cute, right? A light, chocolatey batter takes a dive right into a hot waffle iron and “bakes” until the cookies have fluffed up. Once removed from the waffle iron and cooled, the boot print cookies are sprinkled with sugar “snow.” Now you’ve got holiday sweets with personality that everyone will love, and they won’t be too hard on your waistline.
Ingredients:
Makes 22 cookies
- 8 Tablespoons unsalted butter at room temperature
- 2/3 cup brown sugar
- 2 eggs
- 3 teaspoons vanilla
- 1 cup whole wheat pastry flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/4 cup canola oil
- 1/2 cup mini chocolate chips
- powdered sugar
Tools:
- stand or hand mixer
Instructions:
1. Heat up a nonstick waffle iron and spray it with nonstick cooking spray. Cream the butter and brown sugar in a stand mixer bowl, then add in the eggs and vanilla and mix until combined.
2. Add the pastry flour, cocoa powder, salt, canola oil and mini chocolate chips to the mixer bowl and continue mixing until fully combined.
3. When the waffle iron is hot, scoop one tablespoon of the boot track cookie mixture into each of the four sections. Close the iron and cook until the cookies have fluffed up.
4. Remove the cookies from the waffle iron and place them on a wire rack to cool. When they’re cooled, dust them with powdered sugar.
5. Take a healthy bite out of Santa’s sweet boot tracks, and get excited that he’s about to drop some gifts underneath your tree!
