ICYMI… cauliflower rice is all the rage right now. From pizza crust to sushi rolls, we’ve been seeing this wonder ingredient pop up in tons of recipes on Pinterest and Instagram. It’s no wonder — the stuff is easy to make AND low in carbs and calories. The most intriguing recipe we’ve seen to date? Cauliflower Rice Pudding! Cauliflower for dessert? We’re willing to give it a shot! Read on to see how we made it.
Ingredients:
— 1 cauliflower
— 1 1/4 cup coconut milk
— 1 Tablespoon vanilla extract
— 1/3 cup brown sugar
— 1 1/2 teaspoons cinnamon
— 2 eggs
— 1/2 cup raisins
— 1/2 shredded coconut
Instructions:
1. Break cauliflower into small pieces and pulse in a food processor until fine. In a large saucepan, combine riced cauliflower, coconut milk, vanilla, brown sugar, cinnamon and eggs. Stir to combine.
2. Bring cauliflower mixture to a simmer over medium heat. Stir until thickened, 8-10 minutes. Fold in raisins and shredded coconut. Simmer for 2-3 minutes. Remove from heat.
3. Serve with fresh fruit and a sprinkle of cinnamon. Enjoy!
