Make Your St. Patty Day Delicious With This 5-Ingredient Irish Colcannon
It’s nearly St. Patrick’s Day, and you know what that means — all things Irish and all things green! This easy five-ingredient colcannon ticks both boxes. It’s a traditional Irish recipe that’s basically a simple mashed potato with added kale (or other green cabbage) and spring onions. It’s creamy, it’s comforting and it goes beautifully alongside all sorts of traditional Irish food and drink, including the inevitable glass of Guinness (or other amazing Guinness recipes)!
Ingredients:
Serves four
— 3 large potatoes
— 2 Tablespoons butter
— 75 grams curly kale, chopped (approximately 3 cups, chopped)
— 3 spring onions, chopped
— 3 Tablespoons milk
— salt
— black pepper
Instructions:
1. Thoroughly wash the potatoes and cut into chunks. Boil in a large pot of water until fully cooked.
2. Meanwhile, melt about half a Tablespoon of butter in a frying pan and add the chopped kale. Cook over medium heat for four to five minutes, until wilted. Add the chopped spring onions and cook for one more minute. Set aside.
3. When the potatoes are soft, drain them and add the remaining butter and the milk, along with a generous amount of salt and pepper. Mash thoroughly.
4. Add the cooked kale and spring onions, and mix to combine. Check the seasoning and serve warm.
Thoroughly wash the potatoes and cut into chunks. Make sure the chunks are all the same size so they cook evenly. You can peel your potatoes first if you want a super smooth colcannon — but I prefer to leave the skins on, as they contain most of the potato’s nutrients. Boil the chopped potato in a large pot of water until fully cooked.
Meanwhile, melt about a half tablespoon of butter in a frying pan and add the chopped kale. Cook over medium heat for four to five minutes, until wilted. Add the chopped spring onions and cook for one more minute. If you like, you can toss in some garlic at this point to add even more flavor to your creamy colcannon. When the veggies are cooked, set aside.
When the potatoes are soft, drain them and add the remaining butter and the milk, along with some salt and pepper (potatoes love salt, so be generous!). Mash thoroughly until smooth and creamy.
Add the cooked kale and spring onions, and mix to combine. Check the seasoning one more time and serve warm.
