It’s no secret that the rainbow food trend dominated 2016. From rainbow donuts to rainbow grilled cheese, rainbow bagels and more, it was a VERY colorful year. Well, it’s officially 2017, and we want to keep the ROYGBIV going! Introducing our Magical Rainbow Toast. We guarantee it’s the best (and brightest) way to start your day! Read on for the recipe.
Ingredients:
- sprouted grain toast
- 4 8-ounce packages cream cheese, softened
- 1/2 cup raspberries
- 1/2 cup pomegranate seeds
- turmeric
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1 pineapple
- 1 banana
- 1 cucumber
- 1 avocado
Instructions:
1. Place 8 ounces of cream cheese into 4 separate bowls. Add raspberry or pomegranate juice to the first bowl to make pink cream cheese. Add blueberry or blackberry juice to the second bowl to make blue cream cheese. Add a pinch of turmeric to the third bowl to make yellow cream cheese.
2. Spread a spoonful of pink cream cheese on a piece of sprouted grain toast. Top with raspberries and pomegranate seeds.
3. Spread a spoonful of blue cream cheese on a piece of sprouted grain toast. Top with blueberries and blackberries.
4. Spread a spoonful of yellow cream cheese on a piece of sprouted grain toast. Top with a few slices of pineapple and banana.
5. Spread a spoonful of plain cream cheese on a piece of sprouted grain toast. Top with a few slices of avocado and cucumber. Enjoy your rainbow toast!
