How to Make Healthyish Vegan Eggnog for the Holidays
Nothing says Christmas like eggnog! Just one sip is enough to put us in the holiday spirit. We’ve already shown you how to whip up the ultimate holiday version of eggnog (loaded with eggs, sugar and cream), so this year we wanted to put a twist on the classic for all of our dairy-free friends out there! Our vegan eggnog is made with fresh almond milk and sweetened with dates. It’s so good we promise you won’t miss the real thing! Read on for the recipe.

– 1 1/2 cups raw almonds– 8 pitted dates
– 1 1/2 teaspoons vanilla
– pumpkin pie spice
– 3 cups water
– dark rum, to taste
Instructions:
1. Place almonds in a bowl and cover with water. Soak the almonds overnight in your fridge. Drain and rinse.
2. Add soaked almonds, dates, vanilla, pumpkin pie spice and water to a blender. Blend on high until creamy and smooth, 2-3 minutes.
3. Add rum to taste. Pulse. Pour eggnog into glasses and top with pumpkin pie spice. Enjoy!
