These Jackfruit Tacos Are a Must-Try for Meatless Mondays
With the temps slowly climbing, the last thing you crave is a hearty meal for lunch. Yes, burgers and meaty pasta are drool-worthy, but they’ll also leave you feeling lethargic for the rest of the day. Solution? Use jackfruit instead. This unique food looks and tastes like shredded meat when cooked. It’s delicious, healthy, and won’t make you feel like you need to unbutton that top button on your pants. While we’ll show you how to use jackfruit for tacos, you can literally — and we mean literally — use it for anything.
Ingredients:
- 1 Tablespoon mango chipotle BBQ sauce
- 1 can jackfruit
- 1 Tablespoon ground cumin
- 2 Tablespoons chili powder
- 1 lime
- 1/4 cup corn
- 1-2 small radishes
- 1 small tomato (sliced)
- small bundle cilantro
- 1 Tablespoon garlic
- 1 teaspoon guacamole
- 1 teaspoon paprika (optional for extra spice)
Instructions:
1. Place garlic in a large skillet with oil over medium heat. Let it simmer for 1-2 minutes.
2. Open and drain the can of jackfruit and pour the jackfruit over the garlic. Let it cook for 2-3 minutes.
3. Sprinkle with chili powder, cumin, and paprika, and continue to let the jackfruit cook for 10 minutes.
4. Next, take a spoon and carefully press down on each jackfruit, smushing it until it looks like shredded meat.
5. Add lime and mango BBQ sauce and toss until the jackfruit is completely coated. Add salt and pepper to taste, if you want it to be saltier.
6. After you lower the heat and let the jackfruit simmer a minute or two more, slice the tomatoes and radishes and chop the cilantro.
7. Take the jackfruit off the stove, and add all the ingredients (jackfruit, tomato, corn, radishes, guacamole, cilantro) into a tortilla.
8. Serve immediately.
