The Whole30 approach seems to cover all the bases. From weight loss to boosted energy, people routinely glow after they finish their 30 dedicated days of healthy eating. However, even with the best intentions, dedicated meal prep, and an arsenal of cauliflower and poultry recipes, it’s easy to let your conviction slip. (Especially when day 16 approaches.) So give yourself something indulgent to look forward to when your commitment begins to wane. These 25 coconut milk recipes will instantly make your mouth water and have you renewing your resolution to keep Whole30 with vigor.

Sweet Potatoes With Coconut, Curry, and Mint: This recipe keeps from getting bogged down in the sticky sweetness of sweet potato with the addition of lime juice, mint, and cilantro. The brightly flavored dish is then complemented with a sprinkle of chopped cashews for some added texture. (via Healthy Seasonal Recipes)

Grain-Free Thai Coconut Curry Turkey Meatballs: These meatballs simmering in coconut red curry sauce are so perfectly spiced, it’s impossible to leave the dinner table with even a single bite left on anyone’s plate. Better make a double batch, because it would be too sad to miss out on leftovers. (via Wholesomelicious)
Dairy-Free Mushroom Soup: Bacon and potato is a match made in heaven. Thankfully, Whole30 doesn't deprive you of that indulgence, but sometimes you may feel like you're missing the cream. Not to worry — it turns out that a splash of coconut milk is an excellent substitute to give that velvety smooth texture you want to a heartwarming bowl of potato soup. (via The Almond Eater)
