Walnuts Will Be Your New Favorite Taco Meat!
Who’s taking part in Veganuary this year? Even if you’re not a vegan for the rest of the year, there’s nothing quite like challenging yourself to do something different for a while — and you never know; you might discover some amazing new vegan recipes! Like these vegan tacos, made with a spicy walnut and black bean taco “meat.” I come back to this walnut meat again and again — it’s super easy to make and dress up with whatever spices you fancy, and it’s unbelievably good!
Ingredients:
- 1 cup walnuts
- 1 teaspoon chilli powder
- 1 teaspoon smoked paprika
- 1 Tablespoon extra virgin olive oil
- 1 cup cooked black beans
- juice of 1/2 a lime
- salt
- black pepper
- 4 mini tortillas or taco shells
- your choice of toppings, e.g. lettuce, tomatoes, avocado, etc.
Instructions:
1. Add the walnuts to a mini food processor, along with the spices and a dash of olive oil. Blitz to form a coarse crumb.
2. Add the walnut mixture to a mixing bowl, and add the black beans, lime juice and plenty of seasoning. Mix well to combine.
3. Serve the walnut and black bean taco “meat” in mini tortillas or taco shells, finished with your choice of toppings (I used lettuce, tomatoes and avocado).

The walnut taco “meat” is full of protein, so it gives a great meaty base to the tacos. Feel free to add extra spices if you like things fiery — a pinch of cumin or cayenne pepper would work so well alongside the smoky paprika.
You can also mix things up with all different kinds of toppings — salsa, sour cream, guacamole, spring onions… the options are endless. I bet you’ll never make these tacos the same way twice. They do say variety is the spice of life!
I love these tacos served cold, but if you would prefer them warm, just heat the walnut taco meat in the microwave before adding your toppings. An easy peasy way to make delicious vegan tacos.
