Move Over Zoodles! Zoats Is About to Become Your New Fave Zucchini Dish
If you’re a fan of zoodles (zucchini noodles), you’ll want to try this awesome new trend: zoats! In case you couldn’t tell from the name, zoats are oats with added zucchini, and they’re a great way to pack an extra portion of veggies into your breakfast (yay hidden veggies!). You can season your zoats however you like — zucchini doesn’t have a particularly strong flavor, so your usual oatmeal toppings should work with zoats too. I decided to stick with the zucchini theme, and I added the spices from my favorite zucchini bread — cinnamon, nutmeg, raisins and nuts. So yum!
Serves 1 – 2
— 1 small zucchini
— 1/2 cup oats
— 1 1/4 cups milk (or a mixture of milk and water)
— 1 teaspoon brown sugar
— 1/4 teaspoon ground cinnamon
— 1/4 teaspoon ground nutmeg
— 1 Tablespoon raisins
— 1 Tablespoon chopped pecans or walnuts
Instructions:
1. Grate the zucchini. Depending on its size, you may not need to use all of it — you need to end up with around 1/2 cup grated zucchini.
2. Add the zucchini to a saucepan, along with the oats, milk, brown sugar, cinnamon, nutmeg and raisins. Place over a fairly low heat, and bring to a gentle simmer. Cook for around 5-10 minutes, stirring regularly, until the oats are soft and the mixture has reached your desired consistency (note that it will thicken slightly as it cools).
3. Add the chopped pecans or walnuts, mix well, and serve warm.
