Celebrate St Patrick’s Day With This Lucky Charm Ice Cream Sandwich Recipe
When you think of Saint Paddy’s Day, green cocktails and pints of Guinness probably come to mind. But with all of the boozy celebrations, you’ll also need plenty of snacks to keep you in top party mode. Cue in these Lucky Charm ice cream sandos. If you have 15 minutes and need to cure a sweet tooth (uh, duh!), then this ice cream sandwich recipe is going to blow. Your. Mind. Celebrate the luckiest holiday of the year by testing out this bad boy recipe below.
Ingredients:
- 1 cup Lucky Charms marshmallows
- 2-3 cups mint chocolate chip ice cream
- green food coloring
- 1 pack pre-cut chocolate chip cookies
Instructions:
1. Scoop 2-3 cups of mint chocolate chip ice cream into a bowl.
2. If you have white ice cream, add 2-3 droplets of green food coloring and stir until the colors completely mix together. Place it back into the freezer until it’s solid again.
3. Separate the pre-cut cookie dough on a cookie sheet and follow the baking directions on the packaging to bake them until they’re golden brown.
4. While the cookies are baking, separate the marshmallows into a small bowl.
5. Take the cookies out of the oven once they’re done, and allow them to cool down.
6. Once the ice cream is solid, take it out of the freezer and carefully scoop the ice cream onto one side of a cookie.
7. Top it off with another cookie and carefully roll the ice cream sandwich into the marshmallows so they stick. Serve immediately.
