These Mini S’mores Tacos Will Change Your Life
Camping season is upon us! On the short list of must-haves for the best camping (or glamping!) trip, are a cactus tent mat, sleeping bag and… I must be forgetting something… oh, that’s right, s’mores! S’mores are one of my favorite summer treats, and I love trying s’mores interpretations. Today we’re making yet another graham cracker, chocolate and marshmallow concoction: mini s’mores tacos! And let me tell you; they blew our minds. Graham cracker taco shell, underdone brownie filling and golden brown toasty marshmallow topping — yes, please!
Graham Cracker Taco Shells
Ingredients:
— 1 cup whole wheat flour
— 1 cup all-purpose flour
— ¼ cup sugar
— 1 teaspoon salt
— 1 teaspoon cinnamon
— 1 teaspoon baking powder
— 1 egg
— ¼ cup vegetable oil
— ¼ cup honey
— 2 Tablespoons milk
Instructions:
1. Preheat the oven to 375 degrees Fahrenheit. Combine the whole wheat flour, all-purpose flour, sugar, salt, cinnamon and baking powder in a bowl.
2. In a separate bowl, whisk the egg with the oil, honey and milk. Stir the egg mixture into the dry ingredients until you have a stiff dough. Don’t be afraid to get your hands in there to mix the dough.
3. Wrap the dough and chill in the refrigerator until firm, about an hour.
4. While the dough is chilling, prepare your pan. Line a baking pan with aluminum foil. Make aluminum foil rolls and attach to the pan.
5. Roll out the dough on a floured surface. Use a glass to cut circles in the dough. Place the circles around the foil rolls to create shells. Bake for 10 minutes.

Brownie Taco Filling
Ingredients:
— ½ cup white sugar
— 2 Tablespoons butter
— 2 Tablespoons water
— 1 ½ cups chocolate chips
— 2 eggs
— ½ teaspoon vanilla extract
— ⅔ cups all-purpose flour
— ¼ teaspoon baking powder
— 1 teaspoon salt
— mini marshmallows
Instructions:
1. Preheat the oven to 325 degrees Fahrenheit. In a saucepan, combine the sugar, butter, water and chocolate chips. Cook over low heat until the chocolate and the butter are melted and the sugar is dissolved. Remove from heat and add vanilla and eggs. You need to mix very, very quickly to keep the eggs from cooking.
2. Add the flour, baking powder and salt to the chocolate mixture. Spread evenly in a greased 8 x 8-inch pan.
3. Bake for 15-20 minutes. Remove from oven and top with mini marshmallows. Broil in the oven for a few minutes, or until the marshmallows have perfect golden brown tops.

To assemble the s’mores tacos, scoop some brownie marshmallows into the graham cracker taco shells.
An alternative way to make s’mores tacos is to bake brownies without the marshmallows. Scoop the brownies in the tacos and place mini marshmallows on each taco. Broil the tacos in the oven for a few minutes until the marshmallows are toasty and delightful.
