Brownie, Moose Tracks, and Pirouline Cookie Ice Cream Cake
Let’s cool off with a killer ice cream cake. This thing is brimming with goodness, starting from the outside you’ll see that the center is framed with a brownie- keeping reading to see the step-by-step instructions to do so. From there we move to the inside and you’ll see it’s layered with a vanilla and chocolate moose track flavored ice cream, but the best part and the part that makes it for me is the Pirouline Cookie lined center.
Small note and in my humble sweet tooth opinion: Yes, the recipe is highly adaptable, but let me say, the part you don’t want to swap out is the Pirouline cookie. Once you make this you’ll see why.
Ingredients:
– 1 brownie box mix
– 1 1/2 cups vanilla moose track
– 1 cup chocolate moose track
– Pirouline cookies
Tools:
– 13 x 17 inch bakesheet pan
– parchment paper
– loaf pan
Instructions:
1. Preparation: Line a 13×17 bakesheet pan lined with parchment.
2. You can make your brownie batter or use a box mix. Pour batter onto bakesheet and bake according to recipe or to brownie box instructions. If using the latter bake for about 18-20 minutes. Remove pan from the oven and transfer to a wire rack to cool completely. Trace and cut out brownie according to the sides of loaf pan.
3. Line loaf pan with parchment. Place cut brownie pieces into pan.
4. Fill first layer with vanilla moose track flavor, using an offset spatula, smooth layer to an even finish. Next, layer with chocolate moose track flavor and then using an offset spatula, smooth layer to an even finish. Place Pirouline cookies down on chocolate layer. Next layer chocolate moose track flavor on top of Pirouline cookies and then using an offset spatula, smooth layer to an even finish. Fill final layer with vanilla moose track, using an offset spatula, smooth layer to an even finish. Lastly, place last piece of brownie layer on top.

You’ll need a 13×17 bake sheet pan lined with parchment. You can make your brownie batter or use a box mix. I went for the latter, if you do as well prepare it according to the instructions. Pour onto your parchment lined bakesheet.
Bake it for about 18-20 minutes. Remove the pan from the oven and let cool completely. Trace and cut brownie according to the sides of loaf pan.

Using an offset spatula, smooth layer to an even finish. Place Pirouline cookies down. Next layer chocolate moose track flavor on top of Pirouline cookies.
Fill second layer with vanilla moose track flavor, using an offset spatula, smooth layer to an even finish. Place last piece of brownie layer on top.
Place fully assembled ice cream cake in freezer for at least 2-4 hours to freeze.
Serve immediately upon slicing. Yum!
