This One Pan Pizza-Topped Chicken Is Genius!
Today we’re blinging up our breasts! Chicken breasts that is. We’re pizza-fying our dinner in a healthy way (though if you simply can’t resist that pizza dough, try one of these healthier pizza recipes instead). Chicken topped with pizza sauce, gooey cheese, pepperoni and crunchy veggies. Oh yes! Cooked all in one dish (protect your hands with quirky oven mitts), this meal makes a great throw-it-all-in weeknight dinner. Top with your favorite toppings: ham and pineapple, hot and spicy, or four cheese all work.
Ingredients:
Serves 4
— 4 skinless, boneless chicken breasts
— 1 Tablespoon olive oil
— ¼ teaspoon salt
— ¼ teaspoon pepper
— ½ cup pizza sauce
— ¼ cup shredded mozzarella
— ½ cup cheddar cheese
— ½ teaspoon dried oregano
— ½ red bell pepper, chopped
— ½ green bell pepper, chopped
— ¼ red onion, sliced thinly
— ¼ cup sliced pepperoni
— 2 Tablespoons freshly chopped parsley
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit. Place the chicken breasts in a baking dish, drizzle on the oil and sprinkle with salt and pepper. Cook in the oven for 15 minutes.
2. Take the chicken out of the oven (if there’s a lot of excess liquid from the chicken, pour all but one tablespoon out) and spoon on the pizza sauce. Sprinkle on the two cheeses followed by the oregano, peppers, onion and pepperoni. Place back in the oven to cook for 10-15 minutes, until the chicken is cooked throughout.
3. Sprinkle with parsley and serve with salad and fries if you like!
