Beat the Back-to-School Blues With This PB+J French Toast
Where has the summer gone? The days are getting shorter, temps are cooling off and kids are already heading back to school. But don’t let that get you down… get in the spirit by watching these unmissable back-to-school movies and get creative customizing your backpack and sneakers! And if that’s not enough to lift your mood, this awesome PB+J French toast will have you raring to go.
Ingredients:
Serves 1
— 2 slices brioche or challah bread
— 1 large egg
— 1/8 cup milk
— 1 teaspoon vanilla paste or extract
— 2 Tablespoons unsalted butter
— 1-2 Tablespoons jelly
— 1-2 Tablespoons peanut butter
— a little powdered sugar to dust (optional)
Instructions:
1. Using a fork, lightly whisk the egg, milk and vanilla paste together in a deep plate.
2. Briefly, dip one side of your sliced bread into the egg mixture and set aside. Repeat with the other slice.
3. Heat one tablespoon of butter in a non-stick frying pan until it starts to foam.
4. Fry the bread, soaked side down, for 2-3 minutes until nicely browned, and set aside on a plate to cool slightly. Repeat with the other slice.
5. Spread jelly on the fried side of one of the slices and peanut butter on the other. Sandwich together.
6. Dip both sides of the sandwich into the egg mixture.
7. Heat the remaining tablespoon of butter until it foams.
8. Fry the sandwich on one side for 2-3 minutes.
9. Use a spatula to carefully flip over to the other side and cook for 2-3 minutes until golden. Serve with a light dusting of icing sugar, if you like.
** Double or triple the egg/milk quantities if you are making more than one serving.
