Ingredients:
— 3-4 Tablespoons marinara sauce
— handful of spinach
— 1 cup shredded mozzarella cheese
— 1/4 cup Parmesan cheese
— 1/4 cup sliced baby portobello mushrooms
— salt and pepper (optional)
Instructions:
1. Preheat the broiler to high.
2. Sauté spinach and mushrooms in a skillet over medium-high heat until softened and set aside.
3. Place four ramekins on a baking sheet.
4. Add around 2-3 tablespoons of marinara sauce to the bottom of the ramekins.
5. Layer 1-2 tablespoons of mozzarella on top.
6. Add the cooked mushrooms and spinach into the ramekins.
7. Sprinkle with more mozzarella.
8. Add about one tablespoon of marinara sauce.
9. Sprinkle more mozzarella, Parmesan cheese, salt and pepper.
10. Take the baking sheet with the ramekins and place it under the broiler and let it cook for about five minutes, or until the cheese has melted and browned.
11. Take out of the oven and serve warm.
