Rainbow Madness: Introducing The Double Rainbow Cake Recipe
If there’s anything we love more than all of the green for St. Patty’s Day, it’s rainbows. So in the spirit of showing rainbows some love, we went all out on this one. Introducing our St. Patty’s Double Rainbow Cake recipe. It’s rainbow on the inside, rainbow on the outside, although we wouldn’t exactly call it an ice cream paint job.
Ingredients:
- 2 boxes white cake mix, prepared according to package directions
- Food coloring
- 5 tubs of fluffy white or vanilla frosting
- M&M’s (in every color of the rainbow!)
First, grab a large bowl and make your cake mixes according to the package directions.
Then divide the batter into 6 bowls and tint with food coloring. We chose to color our cake purple, blue, green, yellow, orange, and red.
So pretty and colorful!
Next, spread the batter into your pans. We only had 3 pans so we baked the cakes in 2 batches. Bake according to package directions.
After the cakes are baked, start the frosting process.
Continue adding layers and frosting.
And finish layering with the last red layer!
Frost the entire cake with a thin layer of frosting. This is your crumb coat, named as such because it corrals all of your crumbs.
Place in the fridge for 30 minutes.
Meanwhile, assemble your M&M army.
Remove cake from the fridge and add a thick layer of frosting. Now you’re ready for the M&M action.
Build your M&M rainbow one row at a time, until you’ve reached the end of the rainbow. Then serve it up!
