Turn Your Turkey Day Leftovers into Roasted Turkey Queso

It’s the holiday season again and you’ve got relatives all over the place. While you could certainly feed them leftover turkey sandwiches, why not change things up a bit? Our Leftover Turkey Queso is sure to get you and your guests out of your leftovers rut. Don’t have anymore turkey or you need a pre-holiday appetizer? Feel free to substitute rotisserie chicken instead!
Ingredients:
– 1 16-oz. package Velveeta
– 1 12-oz. can Ro*tel
– 1/2 cup shredded turkey or rotisserie chicken
– 1/2 packet chicken taco seasoning
– 1/2 cup black beans
– 1/2 cup guacamole
Let’s start by making the original queso recipe. Chop Velveeta into half-inch cubes and place in a medium-sized bowl. Add Ro*tel and heat in the microwave for five minutes until smooth and creamy, stirring every couple minutes. Reheat as necessary in 30-second intervals.
Remove queso from microwave. Toss shredded turkey or chicken with taco seasoning and add to queso along with black beans and guacamole. Gently fold the mixture and reheat in the microwave for another 30 seconds to one minute. Serve with chips on a fun platter and let your guests dig in!
