Spike Your Sweets: Watermelon Margarita Poptails
The dog days of summer are here, which means watermelon season! Besides our 25 ways to win with watermelon and 21 MORE watermelon recipes that will blow your MIND, we thought it appropriate to give you a tipsy watermelon treat to beat the summer heat. These Watermelon Margarita Popsicles are just the thing you need to cool down on a hot day. Throw everything into a blender, freeze, and you’re done.

Ingredients:
– 5 cups seedless watermelon (about 1/2 of a large watermelon)
– 3/4 cup lime juice
– 1/2 cup sugar
– 1/2 cup tequila
– 4 limes
– Margarita or other coarse salt
Tools:
– 10 5-ounce Dixie cups
– Short popsicle sticks or craft spoons
Place all ingredients in a blender and blend until smooth and sugar is dissolved.
Strain ingredients through a mesh sieve to remove watermelon pulp.
You will be left with about 5 cups (40 ounces) of popsicle mixture.
If using Dixie cups, prepare limes by slicing 3 thick slices from the middle section of each lime. Insert short popsicle sticks through center of limes. You will then place these on top of popsicle mixture in each Dixie cup.
Divide popsicle mixture between Dixie cups or popsicle molds. Top with lime popsicle sticks. Freeze for 2 hours.
Freeze overnight and sprinkle with margarita salt before serving. Enjoy!
