Ingredients:
- sugar cookie dough
- chocolate melts
- crushed hard candy
- sprinkles
- oven-safe lollipop sticks
Instructions:
1. Make your favorite sugar cookie dough, then pre-heat the oven to 350 degrees Fahrenheit and line baking trays with baking paper.
2. Place hard candy in a Ziplock bag and crush with a meat mallet or rolling pin.
3. Roll out cookie dough on a lightly floured surface to no thicker than 1/4 inch thick. Cut out using a circle cookie cutter around 2.5 inches in diameter. Using a smaller cookie cutter, cut out the center of each cookie. Lastly, press lollipop sticks into half of the cookies, directly under the cutout window.
4. Bake for approximately 10 minutes, or when cookies are set but haven’t started browning. Remove from oven, then fill the cutouts with crushed candy. Place back into the oven and bake for 5 minutes, or when the candy has completely melted and the cookies have slightly browned. Cool on baking tray until candy has hardened.
5. When the cookies are cool, add sprinkles into the candy section of the cookie halves with lollipop sticks attached. This will be the bottom cookie. Melt chocolate, and working one cookie at a time, pipe or spread chocolate on the edges of the bottom cookie. Sandwich the cookies without sticks on top.
