We’ll be the first to admit it: We love dessert. We *especially* love summer desserts made from all of the amazing in-season fruit we get to enjoy this time of year. One of our favorite things to whip up? Fruit crisps! There’s nothing like the combination of berries and a crumbly, sweet, buttery topping. Oh, and they’re SUPER easy to make. Ready to get cookin’? Read on for our Peach Blackberry Crisp recipe!
Ingredients:
– 6 large peaches
– 2 cups blackberries
– 3 lemons
– 1/2 cup granulated sugar
– 1 1/2 cups all-purpose flour
– 1 1/2 cups oatmeal
– 2/3 cup brown sugar
– 1/2 tablespoon cinnamon
– 1/4 teaspoon ginger
– 2 sticks salted butter, chilled and cubed
– vanilla ice cream
Instructions:
1. Preheat oven to 350 degrees F. Cut peaches into 1/2-inch pieces. In a large bowl, combine peaches, blackberries, the zest of 2 lemons, the juice of 3 lemons and granulated sugar. Stir to combine.
2. Spoon the fruit mixture into 6-ounce ramekins. Alternately, you can put the entire mixture into a large baking dish or pie pan.
3. In another bowl, combine the flour, oats, brown sugar, cinnamon and ginger. Stir together. Add the cubed butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the dry ingredients until large crumbs are formed.
4. Spoon the crisp topping over the fruit. Bake crisps for 30-35 minutes, until the top is golden and the fruit is bubbly.
5. Serve warm with ice cream!
