Take Your Memorial Day BBQ to the Next Level With Sweet Chili Halloumi Skewers
Are you throwing a BBQ to celebrate Memorial Day this year? There’s no better way to spend the holiday than with friends and family simply enjoying each other’s company. Good food certainly helps too, and these sweet chili halloumi skewers are perfect. Paired with colorful veggies and chunks of sausage, they’re brilliant cooked on a BBQ (or in a griddle pan if it’s raining!). Drizzle them with sweet chili sauce, and serve them alongside grilled flatbreads and salad for a healthy meal that’s chock-full of flavor.
Ingredients:
- 1 yellow bell pepper
- 1 small zucchini
- 1 small block halloumi cheese
- 4 cooked vegetarian sausages
- 2/3 cup cherry tomatoes
- 2 Tablespoons sweet chili sauce
- juice of 1/2 a lemon
- salt
- black pepper
- 1 Tablespoon oil
- fresh cilantro
* You will also need: approximately 6 large metal skewers
Instructions:
1. Cut the pepper, zucchini, halloumi, and sausages into large chunks. Spear the pieces onto six large metal skewers, along with the cherry tomatoes, in whatever order you prefer.
2. In a small bowl, combine the sweet chili sauce with a squeeze of lemon juice, and a pinch of salt and pepper.
3. Brush the kebabs lightly with oil, and cook for a few minutes either on the BBQ or in a hot griddle pan, until the vegetables and halloumi are slightly charred. Serve drizzled with the sweet chili sauce, topped with chopped cilantro if desired.

These halloumi skewers are so adaptable — feel free to use different veggies if you prefer. I like to use as many different colors as I can, to make them look as bright and vibrant as possible. I really loved using both halloumi and vegetarian sausages together (the only thing better than one yummy ingredient is two yummy ingredients, right?), but you can stick to just one kind of protein if you prefer.
These skewers are pretty healthy, as far as BBQ food goes — just go heavy on the veggies and don’t go overboard on the chili sauce if you’d like to make them even lighter!
