This Sweet Potato Parfait Is a Must-Have for Thanksgiving

But even though this annual holiday is based around the bird, we say forget the main course and jump right into dessert. These sweet potato parfaits are going to Blow. Your. Mind. With sweet layers of marshmallows, sweet potatoes and brown sugar, this grab-and-go dessert is going to make all your family troubles go away. Need another reason to give this swoon-worthy treat a shot? This parfait is topped with toasted marshmallows and drizzled with honey. Yum. Ingredients:
- 1/2 cup mini marshmallows
- 1 teaspoon honey
- 1/4 cup brown sugar
- 1 pound canned yams
Instructions:
1. Open the can of yams and pour them into a medium-sized saucepan.
2. Cook for around 10-15 minutes over medium heat until the yams are hot.
3. Pour the majority of the liquid out, and with a fork, smash all the chopped yams together until they look like mashed potatoes.
4. With a small spoon, layer a bit of sweet potato on the bottom of a mason jar or small bottle. Smush it until you create a nice thick layer.
5. Grab a handful of mini marshmallows and carefully layer them right on top of the sweet potatoes.
6. Scoop a small amount of brown sugar and sprinkle it on top of the marshmallows.
7. Repeat this process until you fill the entire jar to the top.
8. Carefully add marshmallows on top of the parfait.
9. Toast the marshmallows with a torch and then drizzle honey right on top.
10. Serve immediately.
